The rack, however, is non-stick and worked beautifully yesterday. I sprayed the rack with Pam (only the rack!) and it worked beautifully and cleaned up like a champ. I did put the rack in the dishwasher just to make sure nothing remained in any of the nooks an crannies. If there is one slight complaint it's that the rack does slide forward and backward in the pan. This isn't a problem with smaller roasts, but it can prove a bit cumbersome (even dangerous, in my opinion) when roasting a 20+ pound turkey. For this reason, I also bought myself the Cuisinart mult-clad 16 in roaster, American's Test Kitchen's 2nd choice), for making big turkeys as the rack on this one is much more snug. The price of $47 for the Cuisinart pan was just too good for me to pass up.
Okay, back to my Calphalon. I received it Saturday, and yesterday morning, I roasted a 6 pound leg of lamb. When it was done, I made a reduction of red wine au jous. It was amazing, but here's the point--many reviewers have complained about the inside of the pan on the bottom is slightly raised, creating a slight trough around the perimeter for the juices to flow into. The complaint was that you can't properly deglaze and make a sauce. To this is say, "Nonsense!". My deglazing worked perfectly, and my sauce was outstanding. I had no issue whatsoever. Love the pan!
And here's a tip...
After just using the pan one time, I almost freaked out when after I cleaned the pan, there were these cloudy whitish spots that I couldn't get out no mattter what I did. Do I need to send this back? Should I contact Amazon? Is the finish coming off the pot? None of these was the case. After a quick google search, I discovered that these were simply some mineral deposits that can occur after cooking. I used a few drops of Barkeeper's Friend (Get this--it's amazing!!!) and the spots disappeared like magic restoring my pan to its previous glory.
I really believe you will be as delighted with this pan as I am.
Final point: For those interested in the Cuisinart multi-clad I mentioned, it also just arrived, and like the Calphalon, it's gorgeous, The differences are: 1. It's significan't less expensive, 2. The bottom of the pan is completely flat inside, which might be important for you. 3. The rack is not non-stick, but it fits more snugly. Also, the handles of the rack line up with the handles of the pan, so removing the pan from the oven will be more stable with heavier foods as you can (carefully, with mits), grab onto the handles of both the rack and pan at the same time.
I love that it has a completely stainless steel surface, so I'll never need to replace it just because the "non-stick" surface has degraded over time. And yet, I've never had any food stick, and browning is so much better than in a nonstick pan. I typically roast a bird, then make gravy with the drippings; the slightly elevated center is NOT a problem when making gravy. Then, wipe out with a paper towel and a quick easy scrub with dish soap and a plastic scrubber, with or without a minor soak in between while I take care of other things. I've never had to take heavier cleansers or steel wool to it - it cleans like a dream.
The thick construction means food browns but doesn't burn, and heat distribution is very even throughout. If you're roasting vegetables, you can fit a ton - it's very roomy. I've managed turkeys as big as 26 lbs (bigger than that and the bird will be touching the end handles). It truly is a thing of beauty, attractive enough to take to a party and serve from.
I debated when I bought it on whether a pan I didn't use all the time was worth the money; I can say I'm very happy that I made the investment. It makes tough tasks like roasting large items so much easier that I do so more often than I otherwise would, and I've tried recipes that I might have otherwise passed by. This pan is surprisingly versatile and of such high quality that it will have a permanent place of honor in my kitchen as the years go by.
Other reviewers don't like the "loose" rack...I do!! You can more easily slip carrots, potatoes, etc. under your roast and it is more convenient when you use a baster to suck out juice to baste. The only thing I hadn't realized is that the bottom is not completely flat...I originally bought it so I had a pan big enough to cook my crème brulees in...this is not a big problem, it still works fine for that, just a little more awkward. The rack cleans very, very easily (at least so far).
But if you were looking for a completely flat bottom, this might bother you. It does, of course, work better for roasting purposes.
Other reviewers don't like the handles...I like them fine. It gives me a little extra room in the over if I want to add a small dish next to the roasting pan (very small, but helpful for me).
One point, I found it awkward to try to use it to make gravy in the pan, but maybe that is just me. I was happy that the juices & drippings didn't get "lost" by having to have it in a disposable aluminum pan, they were very easy to recover.
Disclosure: I have not cooked a full-sized turkey, but have cooked a whole pork loin & a lamb sirloin roast.

I was tired of a cheap Teflon kitchen aid roaster i had stuff coming off and thin meatal.
Decided to buy a quality roaster. Was going for Viking but this is just as good for the price.

I bought it 3 years ago (at a much cheaper price of $100 from amazon.ca) and it still looks just as good after several roasts. Cleanup is breeze and takes minimal scrubbing. It can go straight from oven to stove top to make gravies. I don't use the non stick rack as much but I have not noticed any scuffing or peeling of the coating on that and cleanup is quite easy.
If you are looking for a great roasting pan then look no further. YOu will not regret it! Just make sure if will fit in your oven before you buy.
Didn't like the rack. If you don't have a big bird like 15-20 lb then the rack is too big. Even for a big bird the spacing of the rungs on the rack are too far apart.
