Char-Broil TRU Infrared Technology

The Big Easy utilizes Char-Broil’s TRU Infrared technology eliminates hot and cold spots, and delivers juicy, crisp, and flavorful results every time. The TRU Infrared technology takes the mess and hassle out of cooking a perfect turkey (up to 16 lbs.) or other large cut of meat (chickens, pork tenderloins, or beef roasts), leveraging infrared heat to cook the food, instead of heated oil like other products. Because of the oil-less functionality, there is no waiting for the oil to heat up and you can prepare your bird or meat with seasoned rubs or injectable marinades- both of which are not an option with traditional fryers. Most amazing turkey EVER!
I usually do the Alton Brown Good Eats method of brining and roasting (which comes out fantastic) but everyone always says deep-fried turkey is tops. We've never deep-fried a turkey or even had deep-fried turkey, but were determined to do it this year. When I ran across this oil-less fryer however, it seemed like a better/safer/easier method than dealing with all that oil, even if it was a bit more expensive than a basic deep-fry turkey kit. Plus we can use it on other things like chicken and ribs, so it makes it a lot more useful than a once-a-year thing.When it arrived, I put it together in about 45 minutes. Construction wasn't too difficult for me, since I am used to putting together all sorts of things -- the instructions could have bit a little bit clearer, but I got there without much fuss in the end. Then I handed it over to my husband, who seasoned it. Then came the wait for Thanksgiving.The bird was your basic frozen Butterball with pre-injected solution. We cut off the wing tips as suggested. I opted for a 'dry' brine (salt and spices rubbed onto the turkey and put into brining bag squeezing as much air out as possible) for about a day, then we rinsed all the salt off and out of the bird, oiled it up and I let my husband wrestle it into the cooking cage. Next time I will have a tray or cookie sheet for transporting the bird-in-the-cage out to the cooker, because he just carried it and raw turkey juice got dripped a bit. Live and learn!It was a 14lb bird and it cooked in about 2 hours, with the lid off the entire time. I was pretty astonished how fast it browned and how quickly it finished. It looked about as brown as a normal oven turkey within the first 30 minutes, but it browned very slowly after that and the final product wasn't burned or overly-browned for any of our tastes. I am sure it would have been a bit less browned had we skipped the oil though. We had a digital probe thermometer deep in the thigh and the included meat thermometer (which is a fairly nice one, though analog) in the breast. I was careful to re-seat the probe until I couldn't get a reading below 160, before declaring the turkey done. I was pretty pleased that despite the amount of heat the fryer is designed to put out, it was easy to lift out the bird and the digital thermometer had no problems operating in it. I did get turkey juices all over my sister's deck when lifting out the cage to move the probe, so I will have to plan to have a tray or pan available next time to avoid that.The turkey was an absolute hit! It was soooo delicious. The skin was crispy and deep brown and the meat was tender, super-flavorful (thanks to the brine) and juicy. My husband made a supremely great gravy from the strained drippings collected in the drip pan (usually we have hardly any drippings left when roasting, since it usually burns off in the oven while the turkey cooks.) The entire turkey was gone by Friday night -- everyone was eating the leftovers for breakfast, lunch and dinner. I suppose that was the only downside -- it was so good that I never even got to make a single turkey sandwich!!!I cannot wait to try cornish game hens, chicken, lamb roasts, ribs and even corn in this bad boy. My family members all want one now and are hotly anticipating the next time they are around and we fire it up. We might not ever roast a turkey again.
