The Char-Broil Electric Vertical Smoker is a great way to smoke all kinds of foods with a large smoking chamber and 3 adjustable cast iron cooking grates totaling 504 Square Inch The insulated, doubled walled construction is ideal for maintaining even temperature. I have a wood burning smoker that I use all summer, but with the rainy winters around here, I don't want to have to mess with maintaining the temperature on crappy days, so I figured I'd buy an electric smoker to supplement it.
I'll start w/ construction, this is well built. They insulate between the inside and outside layers, allowing heat to stay in. It took about 15 minutes to assemble. The only problem is the door is secured closed with magnets. They do a great job at keeping the door shut, but it doesn't seal it to keep heat in at the level that would be ideal. It's insulated well enough that when it's been smoking all day long, you can still touch the top of the smoker with your bare hand and it's barely warm. Which is great for setting the tray there to put food on or take off. The adjustable grates inside the smoker make it easy to adjust for whatever meat you plan on cooking. Getting the temperature set right is the only thing that takes some practice. It just has a low -> high dial. Since most smoking needs to be at the 215-225 range, you'll need to watch it for the first hour or so to dial it in.
For the smoking, the first thing I ended up smoking were about 12lbs of ribs. They were credited as the best ribs I've made. I used walnut wood chips, for a light smoky flavor and had them smoking for about 6 hours. After that I did a brisket that I left on the smoker while I was at work. 220 degrees for about 10 hours and it was perfect. So moist you could cut it with a fork. So needless to say, it's been a great addition to the outdoor cooking family.
If you're looking for something that works great, is easy to use, easy to assemble and will make great food, I highly recommend this particular smoker.

Overall, this is a great smoker and is a good one to learn on. Love the convenience of it being electric.
Here is a recipe for chicken quarters specifically for this model. This is to help all who are new at smoking and can get you some easy and delicious experience.
*Trim leg quarters of excess fat and skin and the large bone on the side of the thigh. (if still attached)
*Brine leg quarters overnight (half cup each of koser salt and brown sugar to one gallon of water)
*Rinse quarters and pat dry. Add your favorite rub.
*Let quarters sit in room temp for at least 30 minutes.
*Turn smoker on high while leg quarters are sitting and preheat for about 30 minutes with the water pan filled.
*After the preheat, add your favorite chips (I use a mild apple chip) to the chip box (I DO NOT soak) and add to smoker. Let it start to smoke (about 10 minutes or less)
*Add chicken (skin up) and smoke for 1 hour on the highest thermostat setting. (Should smoke the entire time if you filled the chip box to capacity) DO NOT open the box, trust me on this one.
*Open box and add a little more wood if you want xtra smoke flavor but be careful. Some woods are very potent and chicken might come out too smokey. This is why I use apple; it’s a very mild flavor and great for chicken. If not, just let it cook for another hour.
*Remove chicken.
*Baste with your favorite bbq sauce or glaze (I add OJ to my BBQ sauce to thin it out)
*Return to smoker, or preheated grill if you like, and cook for another 30 minutes (till that glaze forms and its super sticky)
*Take out and rest. Total cook time should be about 2 hours.

When I received it, the door thermometer was broken: the little indicator needle had fallen off the fulcrum and sat at the bottom of the indicator. I sent an email to Char-Broil asking how to handle exchanging it for a working one. The website led me from place to place, but I fought it and was able to finally contact them after a half hour. Received a phone call and discussed my issue with the rep, who insisted my order number and serial number did not exist. After being on hold while he checked ... then on hold again while he checked ... he asked me to send copies of the S/N and receipt via the website. After many attempts to upload the info after having my previous tries fail, it finally got through apparently, as I received an email telling me they would be happy to send me a new thermometer - all I would have to do was pay the shipping charge. I balked and indicated that I shouldn't have to pay anything as it would be cheaper for me to just go to the hardware store and get a new thermometer. An email came back that waived the shipping charges because the item was new and I thought I was set ... until I received the next email that indicated the issue was closed because I was going to go buy one at a hardware store.
So: if you want a pretty inexpensive smoker that will probably work spring through fall, and you're lazy about cooking like me, this might be a good choice. Just prepare for a hardware store visit.
