I purchased this May 8th. Today, on a 94 F degree day -- so cold and hot was not the issue -- the pot broke. This is a mighty expensive double boiler to be having that happen.If I had purchased it in a shop I would return it -- and assume I'd be given another. If I had a number to call I's call --again assume I'd be given another. This review seems to be the only way to get a message out. If this is standard for the product -- beware -- it's too expensive to buy a double boiler every 6 weeks. If this is an anomaly and I receive a new one in the mail. I will try to delete this review and write one commensurate with the product.

Since I'm new to working confection projects, but I suspected a decent double boiler was needed, I started a bit of research and looking on-line: Learned that, although somewhat heavy, a ceramic container for the chocolate is best for heat maintenance while working. This was the only one I could find, decided the $$ could be worth it in the long run. All I can say is that my decision to purchase this unit - top of the line compared to others noted - was absolutely the correct decision hands down on all fronts for my home kitchen. The craftsmanship is excellent. This unit was packaged from the factory as I would expect fine crystal or porcelain to be - all the "parts" (3) were individually wrapped and secured with thick card board in 2 separate boxes and in turn packed into 1 fitted box. This unit was a joy to use and clean. Using only 1" water it heated up quickly and maintained a working temperature well for my chocolate. The overall size of the ceramic bowl also worked well for my holiday chocolate gifts: Nut Clusters and Chocolate Peanut Butter Cups. Looking forward to the next holiday season and perhaps a more varied chocolate gift offering!

I've been wanting a double boiler for quite some time and finally took the plunge- I'm not disappointed. The piece came in beautiful condition and carefully packaged. The wall of the stainless steel base and the porcelain insert are both very thick- even the lid is heavy! The handles are solid and riveted to the body of the pan- very solid construction.

I was hemming and hawing over the price ($180 for the porcelain double boiler vs. $50 for an average stainless steel double boiler) but I'm really glad I invested in the porcelain. I use it mostly for ganache bases and custards. It does take a lot longer to melt chocolate in this than a regular pan or even a glass bowl set in boiling water (which is what I used to do) but it's gentler and gives you better results. The risk of over-heating and curdling custard is also lower because everything is slowed down a bit thanks to the insulation value of the porcelain.

Even though this is a great product and well worth the $255 Williams-Sonoma advertises for the exact same thing, consider the use value carefully. If you're only needing a double boiler once or twice a year, you may be better off sticking to the old "glass-bowl-in-a-pan-of-boiling-water" method.

The saucepan came without the double boiler insert initially (mistakes happen). When I called the company about it, they were extremely professional and immediately shipped out the missing part, with some really sturdy oven mits due to the inconvenience. I really like the product, and I'm even more impressed with the customer service.

I was looking online for a replacement for a copper double boiler with ceramic insert and found this all-clad stainless one. I have all-clad pots and pans, which I love, so decided this was a good alternative to a cheap new copper pot that may or may not actually be copper or a VERY expensive copper replacement to my original. This pot is superior to the copper pot in every way, not the least of which will be beautiful for years and never need polishing, plus lifetime warranty. I’m not certain if this pan has been discontinued by manufacturer, but this vendor was the only one that had one. It was advertised as having a slight imperfection in pot, but I couldn’t find one. I thought the price was a complete bargain and am delighted with my purchase.

As an 'Old Cook' I have had to adapt to 'new tricks.' I have owned 'a ton' of All-Clad products and hoped to keep them forever. Enter post-retirement downsizing and today's induction cook tops. Pyrex double boilers aren't going to work. Early non-magnetic All-Clad products aren't going to heat up. Meanwhile, we have three-year-old 'grand-twins' who love Grandma's arrowroot-thickened puddings. So do Grandma and so do I! I shopped Amazon and elsewhere and paid some attention to pricing. This unit is NOT INEXPENSIVE but it is fine construction. With proper pre-heating of water in the bottom pot, custard-making temperatures are achieved in reasonable time in the porcelain top pot. As it happens, All-Clad's bottom pot and the set's lid also fill a very useful gap in pot size in our set of induction cook ware. This, more than anything else, 'cinched the deal' with my wife for me to add this tool to my repertoire. Now, she appreciates the heat control and the 'pudding making' capability of this unit.

We love our All-Clad cookware! Not only does it last forever, once you learn to cook on it, it is non-stick. This double boiler was perfect for rice pudding, melting chocolate, and anything else you may need it for. We would highly recommend it!
