Here is recipe I used for my 4 Quart Ice Cream Maker. You will have to adapt for different sized machine.
Dirty Strawberry Ice Cream
(Makes approximately 4 quarts)
Ingredients:
3 C Organic Whole Milk (Note: glass bottled milk tastes better than carton)
3 C Organic Heavy Cream
3 C Organic Coconut Sugar
2 T Juice from Organic Lemon
4 ½ C Organic Strawberries
Note: Don’t forget to purchase rock salt and ice for the ice cream maker. See guide for quantity.
Instructions:
Prepare ice cream maker for use as per machine instructions. Set aside.
Thoroughly clean organic strawberries. Remove stems. Cut them into very small pieces (large pieces will be hard to eat when frozen). Take ½ C of the strawberries and crush them. Add it to the non-crushed strawberries. Add lemon juice. Mix together. Put mixture into the freezer for approximately 2 hours (this will help ensure ice cream is cold enough when it is being churned). Do not let strawberries freeze!
While the strawberries are in the freezer, mix the milk, heavy cream, and sugar together in a large bowl. Cover, and mixture into refrigerator to chill.
Once strawberries are cold enough without being hard, remove from freezer and remove dairy mixture from refrigerator.
Add milk, cream, and sugar mixture to the strawberries. Combine thoroughly and pour it carefully into the pre-cleaned ice cream maker. Use spatula to help guide mixture into the machine.
Follow instructions for machine use.
Once complete, remove ice cream from the machine and put into a freezer safe container. Let it stay in the freezer until it is the desired firmness. Enjoy!
-The motor sounds like a squealing pig trapped in quicksand trapped in a horror movie. It is disturbingly loud and annoying. I suspect the motor is grossly underpowered. You will not want to use this anywhere inside the house. Find a garage to make your ice cream, preferably your neighbor's garage.
-Compared to other 1 gallon makers, this one does fold up into a more compact size. However, you aren't saving yourself any room if you make 2 quarts or less as there are 2-quart makers like Cuisinart ICE-30BC that are approximately the same size as this stored up 1-gallon maker.
-An ice/salt bath is required for this Hamilton Beach. Other makers instead use a chilled bowl or a compressor. I have a full-size fridge whose ice tray only makes enough to fill the bucket about 1/3 of the way up. Unless you have a way of producing a large quantity of ice (standalone freezer, trip to the gas station), you likely won't have enough to fully fill the bucket. Ice cream makers that don't require ice and salt are more costly and produce smaller quantities but are significantly more convenient.
-Making a quart of vanilla ice cream took about 40 minutes of churning. The end result was delicious.
Overall, this machine produces tasty ice cream and would be appropriate for those who want to make 1 gallon at a time, can supply enough of the ice/salt bath, and have a place to run it where it can't be heard.
Tasting fresh homemade ice cream for the first time gives me the urge to continue making it and getting creative with recipes. I'll spend more to get one that doesn't require an ice/salt bath and is quieter.
