Bought this because I didn't have a lot of storage room and my Dad's vintage ice cream maker sounded like it wasn't long for the world. The machine works great and makes ice cream just as well as our vintage machine used to do. Recipe: 6 eggs (these days I use egg beaters), 2 cans of Eagle brand sweetened condensed milk, 2 cans of evaporated milk, 1 tablespoon of orange liquor, 1 teaspoon (generously measured so I'm sure it ends up being more than a teaspoon) of Neilson Massey Vanilla, and fill up the rest of the container with whole milk. If you want it to be richer, throw in a small carton of cream and/or use half and half. [this isn't low calorie - it's ice cream, it's summer, you are meant to treat yourself]. Put it in the maker, layer on the ice and ice cream salt (rock salt). Takes about 2 bags of 7 lbs ice and a bit of patience as you wait for the ice cream maker to finish. When I was a little girl I used to press my finger on the top if the canister cover to slow down the machine to make it stop faster. Perhaps that's why Dad's vintage unit sounds like it does now? Bottom line if you want old fashioned home made ice cream and don't have the room to store it, this is the unit for you.

I enjoyed making ice cream for the first time! The machine worked well and was easy to clean. The instructions contained recipes and I attempted Strawberry Ice Cream, unfortunately I didn’t have white cane sugar on hand as I had thought and so I used coconut sugar which is caramel colored.

The result was delicious, but not regular strawberry ice cream:).

Here is recipe I used for my 4 Quart Ice Cream Maker. You will have to adapt for different sized machine.

Dirty Strawberry Ice Cream
(Makes approximately 4 quarts)

Ingredients:

3 C Organic Whole Milk (Note: glass bottled milk tastes better than carton)

3 C Organic Heavy Cream

3 C Organic Coconut Sugar

2 T Juice from Organic Lemon

4 ½ C Organic Strawberries

Note: Don’t forget to purchase rock salt and ice for the ice cream maker. See guide for quantity.

Instructions:

Prepare ice cream maker for use as per machine instructions. Set aside.

Thoroughly clean organic strawberries. Remove stems. Cut them into very small pieces (large pieces will be hard to eat when frozen). Take ½ C of the strawberries and crush them. Add it to the non-crushed strawberries. Add lemon juice. Mix together. Put mixture into the freezer for approximately 2 hours (this will help ensure ice cream is cold enough when it is being churned). Do not let strawberries freeze!

While the strawberries are in the freezer, mix the milk, heavy cream, and sugar together in a large bowl. Cover, and mixture into refrigerator to chill.

Once strawberries are cold enough without being hard, remove from freezer and remove dairy mixture from refrigerator.

Add milk, cream, and sugar mixture to the strawberries. Combine thoroughly and pour it carefully into the pre-cleaned ice cream maker. Use spatula to help guide mixture into the machine.

Follow instructions for machine use.

Once complete, remove ice cream from the machine and put into a freezer safe container. Let it stay in the freezer until it is the desired firmness. Enjoy!

I was excited to find this space-saving ice cream maker, but unfortunately it came with a dent. The rim was bent so if used the ice/salt would have been able to get into the ice cream. I never got the chance to try it, so I don't know how it works.

I disliked the thin, tinny aluminum canister that the ice cream mixture goes into, the loud, grating sound of the motor, the length of time it took to make a small batch of vanilla ice cream (40 minutes), and the overall picnic tablecloth aesthetic of this ice cream maker. The only other ice cream maker I've ever owned was a Donvier that required no ice or rock salt; rather, you put the cylinder in the freezer overnight, then hand-cranked a batch of ice cream in about 20 minutes. There was something so easy, hands-on and lovely about the experience. The only downside was that you could only make one small batch of ice cream and then would have to chill the cylinder overnight again. Using the Hamilton Beach unit was the first time I'd used the ice and rock salt method, and I thoroughly disliked it. I suppose the benefit is that you can make a larger amount (4 quarts), and theoretically, you could keep on making batch after batch, if the annoying sound of the motor didn't drive you crazy first. The main draw for this unit seems to be the folding waterproof cloth bucket, which allows the unit to collapse and takes less storage space. But I doubt I'll feel inspired to use it again.

Having never tasted homemade ice cream, I was excited to give it a shot. This maker produced great results but not without some major negatives.

-The motor sounds like a squealing pig trapped in quicksand trapped in a horror movie. It is disturbingly loud and annoying. I suspect the motor is grossly underpowered. You will not want to use this anywhere inside the house. Find a garage to make your ice cream, preferably your neighbor's garage.
-Compared to other 1 gallon makers, this one does fold up into a more compact size. However, you aren't saving yourself any room if you make 2 quarts or less as there are 2-quart makers like 
Cuisinart ICE-30BC  that are approximately the same size as this stored up 1-gallon maker.
-An ice/salt bath is required for this Hamilton Beach. Other makers instead use a chilled bowl or a compressor. I have a full-size fridge whose ice tray only makes enough to fill the bucket about 1/3 of the way up. Unless you have a way of producing a large quantity of ice (standalone freezer, trip to the gas station), you likely won't have enough to fully fill the bucket. Ice cream makers that don't require ice and salt are more costly and produce smaller quantities but are significantly more convenient.
-Making a quart of vanilla ice cream took about 40 minutes of churning. The end result was delicious.

Overall, this machine produces tasty ice cream and would be appropriate for those who want to make 1 gallon at a time, can supply enough of the ice/salt bath, and have a place to run it where it can't be heard.

Tasting fresh homemade ice cream for the first time gives me the urge to continue making it and getting creative with recipes. I'll spend more to get one that doesn't require an ice/salt bath and is quieter.

I've had this ice cream maker for about a year now and I love it! It is so much smaller to store than the standard style. Considering that most of us with ice cream makers don't make ice cream more than a few times a year, that's a nice feature! Make sure that you run it inside in the air conditioning though. We tried running it outside on a hot day and the ice cream never did set up. It works so much better inside!
