How To Use Your Himalayan Salt Plate

When using to grill or cook, pre-heat gradually over the lowest flame possible, slowly increasing the heat to medium for approximately 30-45 minutes until the plate reaches the best cooking temperature of around 300 F. Once the plate is heated, you may either continue to cook over heat or carefully remove the plate and cook off heat, as the plate will maintain its temperature for some time. Please keep in mind that food will acquire saltier flavor as the plate cools, and wet foods will take on more salt than dry foods when served on your salt plate. The holder eliminates excess pressure to any one area of your plate, while protecting fragile edges and extending the salt plate's life. As your salt plate begins to wear down, you will get more use of the cooking surface by using the holder as a frame to hold together the pieces of salt.The naturally anti-microbial surface is easy to clean with a wire brush or simply wipe with a damp cloth, allowing 24 hours to completely dry between uses.

Using a salt plate results in a milder flavor than when using ground salt. DIRECTIONS: Your salt plate will work well on the grill, gas range or chilled in the refrigerator. When heating your salt plate, heat gradually over the lowest flame possible. I have had food served on a salt block several times while dining out in Monterrey Mex and can't say enough about the ambiance and flavor enhancement from the block. Not so sure about the durability of this one however. First time and clearly a crack has developed and yes I followed the instructions exactly. Getting a replacement so will amend my review soon, hopefully for the better.***UPDATE*** Second block looked better, more solid. One hour in oven, 30 min at 275 30 min at 375 degrees then on grill at low heat, 400 degrees. Opened lid and saw the mess. Now I have to get all the salt shrapnel out of my grill.

I've used this on my gas grill to cook steaks, scallops, and bacon wrapped asparagus. It did a great job with all of them!

Pros
- Provides a flat surface for searing
- Automatically salts your food
- Excellent heat transfer to cook food from the bottom
- Easy to clean (it will never look new again, just scrape off the char)
- Good for foods that require salting (e.g. steak) and that cook relatively quickly

Cons
- Takes a while to heat up
- If it's not hot enough, it will take too long and your food will be oversalted
- Not good for foods that require longer cook times. Your food will end up ruined due to being over salted.

A few tips:
- I turn on all four burners on the lowest setting for about 5 minutes, then increase a little and wait 7 minutes, then turn them up half way and wait 7 more minutes, then put burners on 75% and wait 10 minutes. Maintain that heat level for the entire cook time. The block hasn't even chipped using this routine.
- Surface temp of the block is best around 350-400F (use an IR thermometer). This will sear the food when you put it on and maintain a good level of heat to cook it through. For most foods, I'll cook on the first side for ~2 minutes, then flip and do most of the cooking on the second side and flip back to the first side until it's done. The sear on the second side isn't as good as the first since the block cools down a bit.
- Don't use the block until it's up to temp! The longer the food is on the block, the saltier it will be.
- I use the green salt block scrubber/scraper that's probably in the "purchased with" section. It works great to clean the block.

This the only way we cook fish. After it breaks in, marinate less or it may taste too salty. We also cook on it but do not marinate on it before cooking. 30 min marination max once broken in and your not cooking on it. Zero marination if you are cooking on it. Small cracks but nothing serious for heating but FOLLOW INSTRUCTIONS.

This is my first time using one of these plates but it will not be my last. If you like to cook get this amazing accessory. This plate lasts long and as it wears away you can break it up and use it for presentation or to use to salt food. Included is the recipe book which is the reason I picked this one, the ideas are great almost as good as the flavor of the food that it enhances. Great for ovens, grills or just for a cool statement piece for presentation, you will definitely get all sorts of comments on it!

For those of you worried about durability, one corner broke off, but it's holding up well after about 6 uses - and I don't bother with the "slow heating" techniques, I think they are a waste of time. The biggest damage happens to these as they are cooked on the juices of the meat dissolve the block and seep into the natural cracks. Plan on buying a new one every couple of years. They are a bit of a pain to clean (I scrape off most of the residue with the grill brush outside, and then wipe it down with a scrubber under water), but they are totally worth it for the flavor. It should probably go without saying, but don't try to "slow cook" on these unless you want your BBQ overly salty, and don't add any more salt, including things like Montreal steak seasoning or Lawry's seasoning salt. Get it nice and hot, and plan to have a fairly rare steak, or only use thinner cuts that will cook quicker for best results. Oh, and try to avoid actual flame - that will sear the oils from meat onto the surface, and the oils will become sticky and hard to clean. (And don't use soap - no need.)

UPDATED REVIEW (11/2018): I have now owned this SAME salt block for one year and a month. This baby is STILL going strong. Seriously people... It says you'll get about a dozen used out of it, but I'm well on my 50th+ meal tonight (salmon & shrimp mmmmm).

My guess is that people who are having problems with the block cracking are either: a) very unlucky that you got a piece with a deep 'fault line' or b) heating it up WAY TOO FAST.

To this date, I'm still using the salt block in my OVEN. Again, I am very conservative getting it to cooking temp. I start by putting it in a cold oven and then set 170 degrees then bump up by 40-50 degrees every 20 minutes until I reach 400 degrees for fish and 450 to sear Kobe beef.

October 2017: LOVE, LOVE, LOVE this!! My favorite new cooking tool since I'm trying to avoid grilled marks on my food cause they're cancerous! I've already used it 5 times with zero cracking for veggies, fish, chicken and beef. I am really babying it warming it up though. Starting at 175 and going in 25 degree increments every 20 minutes until it reaches 400. Also, I know they tell you not to use it in the oven but it's been too cold to use the outdoor grill so I took the risk and had no problems.

Followed youtube video, Brought it up to 400 Degrees slowly in oven with butcher cut bacon. WOW! Remined me of my great grandparents salt box and cutting slabs of bacon off a huge piece of pork belly. My Ma would fry it in a cast iron skillet and flavor was just like that... Olden times! You have to have this salt block! Absolutely amazing!
….Steak was next, OMG, melt in your mouth... Seasoned just right with no additional salt at all. Buy this if you want the best tasting bacon and steak!

This was a gift to my fiance for christmas. We were really excited to try it out when we got it and we followed the directions to heat it up in the oven and it basically exploded and broke in half. We did still use it for our dinner which made our steak and shrimp taste unbelievably good! The only downsides are that it broke when we followed the directions and it seemed to loose heat really quickly so we didn't get to finish all of our dinner on it but it. I would buy one again if I knew it wasn't going to break.

You get exactly what you wanted. The block is the perfect size for a small grill like we have. The holder is sturdy and perfect. Cooked salmon on it and it tasted great. Need to try some non marinated food on it to really understand what it adds but it was delicious. Great gift.
