What is SOUS VIDE?
Traditionally when you cook/grill/bake, the heat is not quite predictable; you have to remove the food at the right moment to get the exact doneness you are looking for. It is a common occurrence for the food to vary from good to raw to burnt, even for professional chefs. I started off with something easy and inexpensive and went from there. A cheese omelet. I plugged the unit in and it came right on. I turned the dial to the temperature I wanted and then to the time. I did make a mistake but quickly caught myself. I set it for 41 hrs instead of minutes-I'm sure the eggs would not have been so good after 41 hrs. LOL . Making an omelet was as easy as putting it in a pan but using a bag instead made cleanup so much easier. I cracked the eggs, added a drop of butter, some cheese and sealed up the bag. I cooked it at the temperature and length of time the book instructed and went about my business. It does take a while to cook things, so you need to be patient. When the timer was up it beeped. I went in and took the bag out of the water and put the omelet on a plate. It was so creamy and delicious I was amazed and excited to try more.
Next I decided to make Salmon with vegetables. Everything is so easy to get ready. Just put your ingredients in a bag, close it and put into the water. When the timer was up it beeped and our dinner was ready. I put everything in separate bags and just had to open the bags. Salmon was cooked perfectly, the mushrooms and baby bok choy were just how we like it. The zucchini could have been a bit more done for us but it was still delicious. Oh and the cleanup is SOOOO easy. Just throw the bags away and your done. I love it.
I also made over night oatmeal which was really really good and again, as easy as filling a bag with ingredients, getting a pot of water, putting the machine on the temperature and time you want and go to bed. What could be easier?.
Only down side I can see and it's on all the Sous Vide machines is that it takes a long time to cook. It's like a slow cooker in that you have to plan in advance and just go with it. I am looking forward to cooking more and more things and experimenting more. I may buy a container for it as I can just keep it on my counter while it's cooking and not in a pot. Overall I LOVE IT.

I'm still very happy with this Sous Vide Circulator. It has been, for me, quite the workhorse. I've challenged it on cooks up to 72 hours (melty shanks!) and it's come through like a trooper. Still happy with my purchase, and I'd buy it again.
How is this even possible? I paid about a third of the price for this than I did for my last sous vide machine. This is gorgeous, looks very high-end, and I am very pleased with its appearance. What really bowled me over was the packaging. Classy looking. That said, whoever wrote some of the information on the side of the box could spend a little time with spellcheck. But that’s nitpicking. Naturally, I started using it right away, and I couldn’t be happier.
The key will be if it lasts the year that it is warranted for. My last one, although it cost $300, had to be replaced once because it died after eight months. When the second one started malfunctioning after about 10 months, the company became, shall we say, *reluctant.* I decided that stressing out over the longevity of an expensive machine just wasn’t worth it, cut my losses, and started looking elsewhere.
As a woman “of a certain age,“ I know how to take care of my belongings. My kitchen is the most important room in my house. I love to cook and my dishes and creativity reflect it. This “Gizmo” is exactly what I need. No bells or whistles – do I really need Wi-Fi or Bluetooth for anything in my kitchen? - and I’m more than happy not to pay for stuff I don’t need. All I want is functionality. Ease of use doesn’t hurt, either!
Thanks for offering something that gives me the function I need and the silliness I don’t. If necessary, I will update. Here’s hoping that I won’t have to.
It has one fatal design flaw, though, which is why I gave it one star. The bottom plastic piece that covers the motor has three lips that lock into place. These small plastic pieces break very easy. After about a year, I noticed they were wearing and breaking off. I've reached out to the company multiple times by phone and email, and haven't received a response. I would be willing to pay for replacement of this part if the company would offer.
I've since had to throw one of the machines away, and my second one is on it's last leg. I love the cooking method, though, and am going with another brand next time.

The instructions included are not precise and it takes a bit of fiddling and trial and error to get the device to do what it is supposed to do. However, this process only took a minute or so on my first use. Part of this was made more difficult by the fact that the touch-sensitive (heat-sensitive?) switching is not sensitive enough for the fingers of my left hand. I play stringed instruments and calluses sometimes interfere with touch-sensitive screens. I have trouble with touch-pads at supermarkets sometimes, so often have to use my right hand to complete transactions, although I am left-handed. My experience with the Kitchen Gizmo was similar.
The included "cookbook" is little more than a pamphlet and has not proven useful yet. There is far more useful information on the internet.
Sous-vide cooking takes some getting used to and can be quite expensive in terms of equipment and time-consuming in terms of getting it right. Most of the information on the net seems to describe cooking expensive cuts of meat. I would not bother cooking a tender cut of meat sous vide. However, cheaper cuts of meat such as blade and round steak can be made quite tender while still medium-rare, juicy and flavourful with sous-vide and this device works perfectly well for that.
I have also used this device in homebrewing for processes that require precisely timed and controlled temperature sequences, such as extraction of sugars from malted grain. This has been, for me, one of its most useful applications to date.
So, for its price, the Kitchen Gizmo has so far delivered quite well at a much more economical price than other similar devices.
