I'm VERY happy with my purchase and this is what's worked for me. I've also done all the research so you don't have to. Just buy this machine and follow these instructions:
PREPPING THE MACHINE
I don't use an espresso cup so I just removed the grate so there's room for a taller container. The vibration of the machine causes the cup to move so I put a piece of nonslip material down (the kind of rubbery stuff people line drawers with) so the cup stays put while the espresso pours in. If I don't have the nonslip material I have to hold the cup in place.
PREPPING YOUR COFFEE
In order to get the best results you NEED to make sure your coffee is ground properly. First off, a regular coffee grinder will not work. You will not get the results you expect or want because it will not grind to the proper consistency. A regular grinder will create both fine and coarse particles, which is undesirable. The way to achieve the proper consistency is to A) purchase a burr grinder that costs more than this machine or B) have your store grind the beans for you. I do the latter. You can buy burr grinders for less than that but they will not be able to grind to the level of fineness a machine requires. Most stores will grind for free—just tell them you have an espresso machine and they'll make sure it's correct for your needs. It just takes a minute and is so much easier than dealing with grinding by yourself. If you are in Philadelphia I recommend Fante's Kitchen Shop.
TAMPING PROPERLY
The tamper on the machine is mediocre and maybe I'm just short but I find it hard to leverage to get the right pressure since the machine is on my countertop. Just buy Terry's Tamper or something similar and use that instead. You want to tamp the espresso down nicely so it's packed in but loose enough that the water will go through easily. If it's too loose, your espresso will be watery. If it's too tight, your espresso will be too bitter. This will take practice but you'll get the hang of it. I read somewhere you need to use 30 pounds of pressure (push down on your bathroom scale to illustrate this), but I use a bit more. This is part of the technique you need to develop so don't sweat it if it takes you several tries to get it right.
FOAMING YOUR MILK
This is the biggest area where I had to develop a good technique to achieve a latte that approximates what I find in a nice coffee shop. I personally use oat milk (Planet Oat makes an extra-creamy version which works great for lattes) or pea milk. I am not sure what type of cow's milk is best but I've used different kinds with satisfactory results. Buy a frothing pitcher or a ceramic cup and don't fill it all the way because foaming increases the volume of the milk. What you want to do is angle the cup to the steamer in such a way that you see a rolling or whirlpool-ish motion on the surface of the milk. This motion is what gets you the proper microfoam. Keep going until the cup becomes too hot to hold (a rule of thumb I read somewhere). I can't comment on how much you should turn the knob but I've been happy with the results as long as I make sure the rolling motion is there.
DESCALE YOUR MACHINE
Especially if you live in an area with hard water, make sure to maintain your machine by descaling it regularly. How often you have to do this depends on your area, but if you're not sure just do it once a year. Descaling solution is cheap and comes with instructions that are easy.
I am not a coffee snob AT ALL (I literally just wanted to stop spending so much money on lattes) so I'm not an expert or connoisseur or anything. But I like doing research and I've figured out that with this machine and procedure I can get a latte that I'm happy with. Like I said, it's not going to be quite the same as a latte made with industrial equipment, but it's pretty good and friends and family who visit appreciate my lattes too. For $100 (plus some inexpensive accessories) it's totally worth it. I've had my machine for a year and it still works great.

Some notes and tips:
1. The easiest way to clean the steamer is to fill the steaming pitcher with water, immerse the steamer spout completely, and release the steam valve a few times to rinse all the milk out. (I do this twice.) I learned with the old machine that expelling steam by itself is insufficient to clean it. Dried milk builds up inside the spout and will eventually clog it (and cleaning it is pretty gross). However, giving it a good rinse with fresh water after each use prevents this from happening.
2. I have always ground my own beans, because I like the flexibility. However, consistency of the ground is problematic, especially with this machine. If the grounds are too coarse, your espresso will be too weak and you'll end up with more crema than coffee. If the grounds are too fine, the espresso will be VERY strong (not really a bad thing, at least to me) and it can take the machine a very long time to pull a shot. This problem got worse and worse with the old machine, which I finally replaced after it was taking 10-20 minutes(!) to pull a shot, drip by drip. (But note that it had taken 10-12 years to reach this point.)
