Pros
- very inexpensive
- when baskets are not over-filled, oil temp doesn't drop much, if at all (stayed at least 350F)

- relatively efficient, used most of a 30lb propane tank for about 11 hours of use

- thermometer is somewhat delicate, so just handle with a bit of care
- oil temp can be difficult to keep low during idle times, even on lowest valve setting
Now let me just qualify those two cons - if you are rough with this unit, the thermometer will break, but with care, it should be absolutely fine. I can see people complaining that it is easily broken, but if you just finger tighten the nut and not bump it, you should be just fine. Also, on the first day, I had the oil temp reaching 390F, so I ended up shutting it off and relighting it several times. The second day I realized that if you just turn the flame down and throw a small batch of fries in, you can easily keep the temp at 350F.
One last thing - I saw some other reviews state that the jet caused the propane hose to get hot and melt. I was really concerned about this, so I placed a large metal binder clip on the nut at the end of the hose for extra surface area and cooling, and there were no problems at all. In fact, it never got hotter than I could touch, so perhaps those units had a defect.
Bottom line is that I would definitely purchase this fryer again.
The exact same thing happens to oil cookers that have the propane burners under neath. The batter on the bottom will burn, the oil will be ruined, and there's no way to filter out that nasty burnt taste. There's nothing worse than having a bunch of people over to have your fresh fried chicken and fish only to have it ruined by a terrible burnt taste with black specs all over your food. Truly embarrassing.
As soon as I saw this design, I knew immediately it was a winner and a problem solver. It uses a heating chamber that runs through the oil about three inches up from the bottom. The batter can collect at the bottom and not get burnt like all the other fryers. Do yourself a favor and get this type of fryer. I love it. It comes with two individual baskets. I bought a large single basket also for when I'm cooking large batches of the same thing. Now everyone at the campground looks forward to coming over and having good, fresh fried chicken, fish, and French fries every Sunday. I'm going to buy another one for my house.
I read several reviews complaining about it being bent up or broken on delivery or used. That's not the manufacturer's fault. If it is, refuse delivery and get another one. Don't blame Bayou Classic.
I've also seen reviews complaining about it catching fire or blowing up. It doesn't have a temperature regulator on it but that should be clear if you read the directions. You have to watch the temperature and adjust it just like every other outdoor fryer. Read the directions, apply some common sense, and you will love this fryer.
If there's one complaint I have, it's that it should come with some kind of scoop you can use to get the breading out of the bottom. You can buy them but they are a little pricey. Maybe they will read this review and start including one. Other than that, it is so much better than the other designs. I'll never go back.
