Tip #1: I seasoned it thoroughly before first use; I first used olive oil to almost the full rim, then with avocado oil, then just with a big gob of butter. These were the fats I normally use anyway. Each time, just on the stovetop for 15-20 min. I still see layers of the different treatments on the edges of the pan.
Tip #2: before I add any food to the pan, I heat the pan up, only then add the oil/butter, only then add the food; pre-heating the pan before adding the oil/butter is super important for the optimal non-stick effect.
Tip #3: after using the pan (and finishing my meal), I wash it in hot water (no soap) with a scrubby sponge and then dry it completely and leave it on the stove for a minute to heat up to make sure all water is gone, then take a paper towel with a few drops of olive oil to rub around the top; once it's cooled it's ready to store for the next use; never leave it soaking in the sink or drying with water on it on the dish rack.
It sounds like a lot of extra work, but it really isn't - you get used to it and because it's non-stick, everything just wipes of quickly anyway. The other dirty dishes can wait, but the pan gets a quick cleaning right after the meal's over so it's all set for the next time. I use the same treatment for all my cast iron pans and the carbon steel wok and it all works out well. For eggs, I find I still need to add a lot more butter than I like to use either the cast iron or this pan and have them not stick, so I still wind up using my small anolon anodized aluminum pan just for eggs (no Teflon coating on it at least).
This pan is great for crepes, pancakes, and dorayaki, though. For crepes, I use a normal table knife to pick up the edge and then flip it with a fish spatula. Fish spatulas are great for everything that's delicate, I think. Hope this helps!
The pan is specialized in that it has very low sides and I would not use it for cooking meet out of concern that fat could spill out during use (sides are low for better access to remove the crepe). I have had the pan up to 550 degrees as measured by an inferred thermometer and it has not warped and in my opinion is not likely to.do so. You do have to use the pan correctly as with any tool. Personally, I deviated from the instructions on curing the pan and treated as if it were cast iron but will continue per De Buyer's instructions from now on. This pan is slicker than any Teflon pan I have ever used.
I would not recommend this pan for people that have difficulty following instructions, though I did vary from them myself, or have not used pans other than Teflon coasted and are interested in just getting the job done not learning how to use a different tool. A good Teflon pan was good enough for Julia Child and I would not be ashamed to do the same. Personally, I enjoyed the challenge, but I have the time to spare.
I understood from reading the instructions that this pan is coated with wax and the way to remove the wax is to run it under very hot water and then wipe it dry with paper towel. I didn't use any soap.
Next, I put it on my induction cooker, coated it with ghee, and turned the cooker on to the medium high heat setting. Because induction heat cooks so quickly the ghee started to smoke after about 30 seconds and I could see the fat separate in different places. I used a basting brush (silicone won't melt!) to continue to baste the pan while it went through this seasoning process for maybe 3 or 4 minutes. I also turned on the vent fan because there was, initially, some smoke from the oil. I decided the seasoning process was complete when the oil no longer separated on the pan surface. I let the pan cool for about 30 seconds and then carefully wiped it out with paper towels (it was still quite hot).
Now, I was ready to cook my fried eggs for breakfast! Again, I basted the pan lightly with ghee, turned on the heat, and cooked my over-easy eggs to perfection! Delicious, and no sticking to the pan! I used a metal spatula to transfer my eggs and then used a paper towel to wipe out the pan. I didn't think it needed to be washed. After brushing on a little more ghee I hung the pan up to rest alongside its culinary siblings!
This was a super easy process and I will use my new steel pan for preparing eggs, grilled cheese sandwiches, omelettes, crepes, hamburger... or whatever I want to cook in a small quantity. It's a fantastic tool and I'm so glad that Amazon offers this high quality blue steel pan. It's the kind of pan that, as long as I take care of it, my children will inherit it!

I've read that since it's pretty thin (2mm), there is a risk that the pan will warp on induction. So I had to return this one.

Si se pega, hay que dejarla, no tocarla, cuando esté mas hecha se desplegará (a veces hay que convencerla un poco, pero si está muy pegada es que no está todavía).
La limpieza es facil, si se te ha pegado algo con un poco de fairy y un estropajo suave se va rápido. Antes de guardarlo, asegurarse de que está seca y darle son una servilleta una capa muy fina de aceite. Ya está, es sano, cómodo y no parece que sea como las antiadherentes que por muy buenas que sean cada 2-3 años máximo hay que cambiarlas
