Nonstick coating for any kitchen taskCuisinart's GreenGourmet cookware is designed with an exclusive Cuisinart Ceramica nonstick surface, which features a petroleum-free, ceramic-based coating that is applied at a temperature one half that of traditional nonsticks. The coating does not contain PTFE and PFOA, substances often used in nonstick cookware that have raised health concerns over the years. It was also developed using manufacturing techniques that reduce harmful carbon emissions by consuming less energy. The coating is also water-based, unlike other nonstick coatings on the market, which are solvent-based. In addition, Cuisinart's cookware has a scratch-resistant nonstick surface that won't peel off. The new cookware conforms to FDA and European RoHS standards for environmentally sound products. These pans should be hand-washed with a mild detergent. Cuisinart also gets some green cred from the packaging, which is made from 100 percent recycled materials and is printed using 100 percent biodegradable soy ink.
The pans deliver superior heat conductivity, requiring less energy to achieve the desired cooking temperature. Harder than stainless steel, the skillet's hard anodized exterior is dense, nonporous, and highly wear-resistant for extra durability and professional performance as well as quick and even heat distribution. Additionally, the securely riveted stay-cool steel handles are manufactured using 70 percent recycled stainless steel and is oven-safe to 500 degrees F, so food can be browned on the stovetop then transferred to the oven to finish cooking.

Proper Cooking Utensils
We recommend using plastic or wooden utensils in your Cuisinart GreenGourmet Cookware to maintain its appearance and performance. Slight surface marks and abrasions are normal and will not affect the performance of the Cuisinart Ceramica coating.
Durable Cookware for a Lifetime of Great Meals
With a little bit of care, you’ll enjoy a great performance from your Cuisinart GreenGourmet cookware for years to come. A careful hand washing after each use is usually all it takes. But if pans become crusty or heavily greased, a couple of hours soaking in hot sudsy water and a light scrub will have them looking like new. Seasoning your pans twice a year helps to maintain optimal performance, and it’s easy! Just add a half-tablespoon of vegetable oil and spread it around the entire interior, right up to the rim. Then place the pan in a preheated 300°F oven for an hour. Carefully remove the pan, allow it to cool completely, and wipe off any excess oil with a paper towel. Be gentle with your cookware! Avoid stacking, which may cause chipping of the ceramic interior. Show it off on a Cuisinart cookware rack, or store it carefully, with a little breathing room, in your kitchen cabinets.

After 4 months of use, this pan is holding up very well. Grills nicely, easy clean up, and nothing sticks. Eco friendly too. Go for it. You won't regret it.
After 7 months of use, I see that the cleanup of this pan is taking a lot more effort. It is still the best grill pan I have used on my smooth top range but you can see where the finsh is wearing off some as the middle of the pan is becoming lighter in color than the rest of the pan. I have never overheated the pan nor have I used anything abrasive on it.
Otherwise, it's a great non-stick work. Works great on conventional electric ranges. It gets hot on the bottom and stays warm on the sides, exactly what you want with a wok. The wok shape is ideal for tumbling stir fry in the pan and getting even cooking without burning. Keeping everything moving and cooking fast makes this pan a pleasure to use.
Clean-up is simple, no need to wear out your pans putting them in the dish washer. They wipe clean easily. You can make a fast meal AND have fast clean up, once you get the cooking technique mastered.
I researched healthy alternatives to non-stick and came up with ionized aluminum, stainless steel, cast iron and ceramic coated cast iron. None of these seemed like a great choice. I then went to Bed Bath and Beyond to look at pans and discovered the Cuisinart Green line. After seeing the cast iron, I realized we probably would somehow damage our new glasstop stove as it was so heavy, so ceramic coated aluminum sounded great.
I settled on either Calphalon One infused ionized aluminum or the Cuisinart line. However, Bed Bath and Beyond is a bit confusing with the Cuisinart line. They sell Cuisinart "Greenware" as a set and Green "Gourmet" as individual pieces. The Green Gourmet set is a bit more expensive, and I was advised by the salesperson not to buy GreenWare as it has a rough bottom that may scratch a glass top stove. He offerred to order a Green Gourmet set, but I decided to buy one Caphalon and one GreenGourmet frying pan and test them before investing in a set. I honestly didn't expect either to work as well as my non-stick pans.
I generally only cook breakfast on the weekends, so I cooked what I know how to cook. I took both pans and set the burner at the same setting (6 on my stove which is the setting I used for the non-stick pans). I made pancake batter and used an organic olive oil cooking spray. Interestingly, the Cuisinart pan was too hot at 6 so the pancakes burned and I had to set the stove at 4 to get the same results as the 6 on the Calphalon pan. Both pans were great with the pancakes--better than my non-stick pan and probably the prettiest looking pancakes I have ever made. The Cuisinart pan was very easy to clean, but the Calphalon took a bit more effort. On another day, I cooked eggs. Again using the same Olive Oil spray. The eggs immediately stuck to the Calphalon pan. Having read instructions on using cast iron and waiting for the eggs to "release", I waited, and waited and waited. What a mess! I couln't get the burnt eggs off the pan. Of course as soon as I put the pan in the sink with water, they popped right off so clean up was easy. I'm sure there is a correct way to cook eggs on this pan, but I couldn't do it after 4 tries. On the Cuisinart Pan, I had no problem, and surprisingly, the eggs seemed to be easier to turn over than on our old Farberware non-stick.
So after this, I decided to get the Cuisinart and ordered from Amazon which was $50 cheaper than the price quoted by the Bed Bath and Beyond salesperson who offerred to order it for me.
