My double oven and I conspired to try something new. OK, mainly my oven conspired, as the main oven decided to give up the ghost. A pizza oven is no place for a 14lb turkey. I looked at deep fryers, but I really wasn't crazy about dealing with all that oil. Plus I'm a little lazy - I didn't want to trudge up and down the 2nd floor deck stairs to get to the concrete patio as a wood deck isn't suitable for an oil fryer (I'm lazy, not stupid.)
Assembling the unit was very easy - took all of 5 minutes. I read through some of the reviews, and had a pretty good feel for what I wanted to do. I did not inject the turkey - I probably will at some point. I also did not use wood chips this go around. I preheated the roaster on high for about 30 minutes. Before putting in the bird, I slathered on a 50/50 mixture of olive oil and melted butter, mixed with some poultry friendly spices.
It came out great. I have never used a turkey fryer, so I can't make a comparison, but it did turn out a nice dark golden brown and slightly crispy (see attached pictures.) The turkey itself was about as moist and tender a turkey I've ever made, even better than using an oven roasting bag. The drip pan was very convenient for collecting the gravy makings. Clean up was very easy.
All in all, a great purchase.

I ended up doing a 'beer can' chicken using some store brand chicken rub, Arnold Palmer, cut up onions, and a squirt of both lemon & lime juice. About 1hr 10min and it was done........everyone raved about how flavorful and crazy juicy it was!
UPDATE: I've since cooked a 12lb turkey using the 'beer butt' method for the chicken fryers. The turkey came out absolutely fantastic!!! The skin was even pretty crunchy. Could not be much happier with this purchase. The only thing I can use is a tip on how to get the full-size bird out of the basket without some of it falling apart. It is so tender & juicy it's unbelieveable. Still have to master how to get it out of the basket however, the next time I plan on trying to 'pour' the bird into a turkey bag...thinking that may work to keep all the parts attached on the way to the table.
Next up for me to try is to cook just a turkey breast.
Some tips/perceptions after a few uses:
- You need to allow PLENTY of time for this unit to reach it's full operating temp. I can see where it'd take a healthy amount of time to heat up if you had it outside in cold temps. Sometimes the unit's light will never go off if trying to reach max setting... don't worry this doesn't affect your end product. Just make sure it's close before putting your item in there.
- Before the 1st use I would highly suggest firing this baby up to full temp and letting it 'burn in' for a while. I got a lot of fairly foul smelling smoke out of mine upon its first full heating cycle.... I would not want to have that taste in my chicken (or Turkey). I let out the smoke for over a good 30-45 min time frame and then put my 1st chicken in.
- Some smoke emanated from the unit as the chicken cooked and some minor splatter occurred under/around the drip catch can. Bottom line: I can see why they call this an 'outdoor only' unit.
- Clean up takes a fair amount of effort but I've found that if I spray the inside basket with cooking oil the cleanup process is much easier.
