The original way, you had to really work to get a good, not lumpy product. And, with instant, runny or lumpy with chunks of unmixed dry potatoes are no more. The only drawback I can see is you have to have a pretty strong grip to do this. If you cook potatoes to the right doneness, the end result is perfection! Add butter, season, milk or heavy cream and you have great mashed potatoes after a little practice. Recommended
Spaetzle are fresh German noodles. They go well with meat-and-gravy meals, or just on their own with cheese.
Here's mom's recipe:
About 4 cups of all purpose or bread flour (or a mixture of the two)
About 7 eggs
Milk (skim, 2% or whole) or water, to adjust consistency
Salt, white pepper, nutmeg to taste
Set a large (pasta) pot of salted water to near-boil.
Place flour into a large mixing bowl
Add about a tablespoon of salt, a half teaspoon of white pepper and a half teaspoon of freshly grated nutmeg
Make a well in the flour and break the eggs into the well
Add 1/4 cup of liquid (milk or water)
Using a strong wooden cooking spoon, beat the flour and egg mixture by hand, trying to beat air into the mixture, until it forms a thick, gluey dough that sticks to the spoon. This takes about 3 or 4 minutes of beating (about 250 strokes, if you're good like mom). (The dough should be thick enough that you can pick spoonfuls of it up for one or two seconds before it starts to slowly drip down -- use extra liquid if yours is too thick, or add a bit of flour if too thin)
Place the medium or fine disk in the spaeztle machine.
Place the press over the mixing bowl, and use the spoon to put dough in the press.
Cook the spaetzle in batches.
Using both hands, hold the press over the pot of near-boiling salted water and squeeze the spaetzle into the water.
The spaetzle will sink, then rise to the top. Cook them for about 3-4 minutes, then remove with a toothed spoon to a warm pan or plate.\
You don't rinse spaetzle.
Top with some butter and more salt to taste.
(At my house, we like to take the spaetzle from the pot to a frying pan and brown them in butter... decidedly NOT German, but VERY yummy!)
