Keeping it simple, just load the box with your desired wood chips and place it on the grill when you light it up. By the time the grill is preheated you'll be seeing smoke coming from the box and your ready to grill up some lightly smoked chicken, pork or fish along with some veggies. Our first try was with chicken quarters and corn on the cob. It was delicious to say the least but again the smoky flavor was light and for us that was perfect. You'll have to experiment with different chips and or add a 2nd box to your grill to get the desired level of smoky flavor that pleases you. If you set your expectations properly considering that your using a grill and a little box of chips you should be pleased with the results. The one mistake to avoid is wetting the chips. You don't want steam you want smoke.
Side note: I did not soak my chips. If you ask around they say it's best not to.

I buy the Weber chips and cut them down in size. I soak the chips in beer, which add a terrific taste to meats, fish and fowl. I usually let the chips soak overnight and place the smoker into the grille and operate the grille on high until the smoke starts to pour out of the BBQ. It is ready to add your food at this time.
Terrific tasting food that you can find nowhere else.
I use a combination of Smokehouse Products All Natural Flavored Wood Smoking Chips- Mesquite which are shaved and Weber 17103 Mesquite Wood Chips, 3-Pound which are nice size chips. About a handful of each. I start them on the grill while I'm warming it up and all 5 burners are on high, for about 5 minutes, then move it off to the side. By that time the chips are smoking really well. I then turn my burners down to low and grill my steak. I like a nice medium rare (on the redish side) so 3 minutes on each side of the steak and it's done.
The amount of wood chips is perfect for this time frame and the steak is perfect and has a light smoky flavor.

It took me a while to figure out how to properly use the Cuisinart CPT-875 Smoker Tube, so let me share my tips with you. Firstly, this product works well. Just note that the length of the tube determines the smoke duration. I'm sure that is obvious. What is not obvious are these:
- You MUST use 100% smoke wood pellets like the Lumber Jack pellets. I have tried pellets from Louisiana Grill, Weber, and a couple of other Oak blended pellets, and the flame goes out more often than not. If you have been frustrated with flaming out or low-volume smoke, that is the main reason. Buy yourself a small bag of Lumber Jack Hickory pellets, and you will see the difference.
- When you light it, fill the pellets to about an inch from the opening and use a blowtorch to light it. Keep your torch on top of the pellets (or torch it from outside the tube - see the discoloured section in my photo) for about 60 seconds. When you see a flame a few inches tall (like in my photo), leave it and walk away for 10 minutes. This is the important bit!
- After letting it burn for 10 minutes, ensure the flame is still burning. If it is only smoking, hit it with the torch one more time for about 30 seconds. Walk away for 5 - 10 minutes again. If it burns properly, lay down the smoker tube on your grill slowly (careful not to dislodge the burning end of the pallets). I personally don't use the triangle lid that came with the Tube. Assuming you are cold smoking, once the tube is laid down, blow the flame out and let it smoke for a few minutes until it smells nice, not bitter. Then add food to the grill and close the lid. If you start smoking with the bitter smoke, your food will taste bitter too. If you are hot smoking, start your smoker and achieve the desired temperature before adding the food.
- If you are using an electric pellet grill like me, figure out the airflow characteristics by placing your hand over different areas of the grill before it heats up. On my Louisiana Grill, the right-hand side, against the side wall, gives me an updraft. As expected, smoker tubes need air to keep burning/smoking. The placement of the tube within the fan-forced grill is also important. When I place my tube here, it smokes harder but lasts only about 2.5 hours or so. If I place it in another location, say 3 inches from the right wall of the grill, there is a lot less airflow - the tube will smoke less but last longer (say, 3+ hours). It depends on what you want - more smoke or duration.
- If you are using the smoke tube in a Weber or some other kind of grill that allows you to control the airflow, you are looking for THIN, BLUE SMOKE (nice smelling). If you end up with thick, white smoke (bitter-smelling), your food will not taste its best. If you can't control the airflow, be mindful of the smoke smell.
- It is important, so let me say it again. More smoke is NOT necessarily what you want! You want nice smelling, thin blue smoke. You can have thick blue smoke, but let your nose decide. I have made my share of mistakes chasing the best flavour. Including placing three smoke tubes at the same time!! Hopefully, you can learn from my mistakes. : )
