The best chicken I have ever tasted - indescribable flavor and very moist - I'm hooked on smoking.
I am 71 years old, and an experienced cook. I use a number of cooking methods not only to differ flavors and textures of the foods that I make, but also to prevent my own personal boredom of everyday cooking. I had tried smoking food a few years ago, and it was a total disaster. The smoker I had at the time used charcoal, and it didn't come up to temperature no matter what I did. After quite a few hours, I gave up and finished cooking the food in the oven. Although the food did have some smoke flavor, the experience as a whole was a failure. When I saw this smoker roast oven, I decided to give smoking another try.When I got it, I read the manual front to back at least 3 times. Then I did the usual internet research to find out more about the best times and temperatures to use. I guess I was a bit obsessive with this since another failure would eliminate future attempts with smoking. With all of my research and comparing cook times in the product manual, I was still not sure what time and temperature to use for my first attempt with this cooker. So, as usual, I decided that I had to go with my gut and forge forward.My first attempt at smoking with this smoker roaster oven was to use a whole chicken that was 4.5 pounds. The night before I planned to cook it, I thawed it, used a dry brine method, and put it in the refrigerator until the next day. The manual suggests 2 to 2 1/2 hours at 350 degrees for a 3 to 3.5 pound chicken, yet my research suggested 275 to 300 degrees for about the same amount of time. So I decided to go with 300 degrees and planned about 2.5 hours thinking I could crank up the temperature if it wasn't quite done. The second picture shows what the chicken looked like after one hour, and it was already at 159 degrees in the breast. No way could I let it cook another 1 1/2 hours. So I turned the oven down to 250 degrees to give me time to get other things done I had to do before dinner preparation. About 1/2 hour later, the chicken was up to the temperature that it was fully cooked, and I still wasn't ready for it. OK, don't panic - improvise. I pulled the chicken out, put it on a cutting board, and covered it with Reynolds Wrap to keep it warm.An hour later, I was done with everything I had to get done and finished making the sides. This was about the time I had originally planned for the chicken to be done. I have to say that this was the most amazingly flavored chicken I have ever eaten. Even the breast meat was moist and flavorful. In one of the pictures, you can see the juice flowing from the punctures made by the meat thermometer. I am now totally hooked on smoking other foods.Now for some of the logistics and suggestions for using this smoker roaster. First of all, I believe the suggested temperature and cook times are far to high. It is important to rely on a meat thermometer to determine the doneness of any meat you decide to smoke. As you use the unit, you will know better how to smoke the meats that you use. I would also suggest that you coat the lid, the cook well, and the cooker with oil to facilitate cleaning. I used Pam the first time, but I'm not sure that was the best choice. The entire unit was not difficult to clean, but it seemed to leave an oily residue that we couldn't get off. Next time, I will try olive oil. Other than that, cleaning was not a problem at all. We needed nothing more than hot, sudsy water and a scrubby for all of the parts.Although I set this up to smoke on the front porch the first time, there really wasn't much smoke coming out of the unit. There was a little bit of the smell of burning wood, but not much. Next time, I think I will try setting it up on a stove with a fan above it. Since I live in the Northern U.S., it would be advantageous to be able to use this smoker indoors in the winter.About the only disadvantage that I can think of with this smoker roaster oven is the size. It's not something that you would normally have permanent space for on a counter top. When I store appliances, I generally keep them in the original boxes to keep them clean. This means having to pull them out of the boxes before setting them up. This is an inconvenience, but not insurmountable, and this also requires storage space. I don't know about you, but I tend to use appliances more when they are convenient to use. Although having to pull this unit out of a box isn't convenient, I will do it because I like the results of the appliance.In summary, at this point, I would highly recommend this smoker roaster oven because the results are amazing. I also like that it can be used as a roaster or a slow cooker. I haven't tried these methods with this cooker as yet, but this unit may replace my Nesco cooker. As I try different foods, I will try to update this review, but so far, I couldn't be happier with it. This is definitely a keeper.I hope this review was helpful for you, and I am more than willing to answer any questions you may have.

I rarely take time to review products but felt I had to with this one because we are so pleased with it. I am just beginning to smoke meats and this works quote well and is such a convenient size. I reviewed many products before deciding on this and an very glad I did.
1. Not too big, not too small. I can do two racks of ribs at a time in the smoker as per directions. To do ribs for our large family I would need a medium box smoker but there is a way to solve this problem using the Oster smoker. ( You can do more ribs using the 3-2-1 recipe by doing "3" in the smoker because that is the only part of the recipe requiring smoking and doing "2" and "1" in 200° oven.)
2. Temp is fairly accurate and smoking works well in the low 200°s range. I fill the chip cups 1/3 to 1/2 full, turn temp to 300° to start chips smoking then turn temp down to 200°, cover and close vent to keep all smoke in. I do this one or two more times at about 30-45 min intervals. That has given good smoke flavor. You only need to make smoke for the first third to half of total cooking time but it is very important to do long slow cooking to have tender, juicy meat. Also make sure you put liquid in bottom of pan so meat doesn't get too dry.
3. Aluminum foil is my new best friend. I line the bottom of the pan with foil for easier clean up. I spray the lid, sides, bottom of pan with cooking spray, it really helps with clean up. I tried covering inside of lid with foil but this is not necessary if you spray it with the oil before starting.
3. Makes great smoked jerky. Again, turn temp up to start smoking but then down to 175-200° for duration and only smoke for first third to half of total cooking time. (No water in pan for jerky). My husband cannibalized some of our baking racks to make additional trays for jerky but I too wish Oster would make some stacking racks for this appliance. Also, the disposable grill toppers will work for jerky and they may be reused a time or two.
4. We used fine wire to make little handles for the chip cups, makes them so much easier to remove and refill during smoking time.
5. I like using long temperature probe stuck in lid vent to check that temp is staying around 180-220. These are very inexpensive at big box stores, about $3. I don't use this until I have completed the smoking part of the total cook time because I don't want the vent open after I have made new smoke

I added pictures of our homemade racks, the wood chip baskets with the wire handles (difficult to see the very fine wire) the long thermometer I use and the disposable trays for jerky (I cut these in half and put them on our homemade racks--can do 3 at one time)

I guess I was a bit obsessive with this since another failure would eliminate future attempts with smoking. With all of my research and comparing cook times in the product manual, I was still not sure what time and temperature to use for my first attempt with this cooker. So, as usual, I decided that I had to go with my gut and forge forward.

My first attempt at smoking with this smoker roaster oven was to use a whole chicken that was 4.5 pounds. The night before I planned to cook it, I thawed it, used a dry brine method, and put it in the refrigerator until the next day. The manual suggests 2 to 2 1/2 hours at 350 degrees for a 3 to 3.5 pound chicken, yet my research suggested 275 to 300 degrees for about the same amount of time. So I decided to go with 300 degrees and planned about 2.5 hours thinking I could crank up the temperature if it wasn't quite done. The second picture shows what the chicken looked like after one hour, and it was already at 159 degrees in the breast. No way could I let it cook another 1 1/2 hours. So I turned the oven down to 250 degrees to give me time to get other things done I had to do before dinner preparation. About 1/2 hour later, the chicken was up to the temperature that it was fully cooked, and I still wasn't ready for it. OK, don't panic - improvise. I pulled the chicken out, put it on a cutting board, and covered it with Reynolds Wrap to keep it warm.

An hour later, I was done with everything I had to get done and finished making the sides. This was about the time I had originally planned for the chicken to be done. I have to say that this was the most amazingly flavored chicken I have ever eaten. Even the breast meat was moist and flavorful. In one of the pictures, you can see the juice flowing from the punctures made by the meat thermometer. I am now totally hooked on smoking other foods.

First I’ll start with positives:
For a complete newbie in smoking, this smoker oven is great. My first item I smoked was a whole chicken. It came out juicy, smoky, and heavenly. Honestly, I didn’t expect these results!
It’s portable, versatile, you can do almost anything in it! It’s big enough for our family of 5. Definitely could fit a turkey if you wanted. I’ll give you specs on my chicken size, etc. definitely love it. Would buy it again.

What I disliked:
Very short cord. They say no extension cord, but when you’re smoking your food, you have to do it outside. I did it on my porch. My outlet it pretty low, and the cord still couldn’t reach it. So I had to use extension cord. I used the big, sturdy one. With those three “pokes”, don’t know it’s name.
Second, the instructions are weak. It gives you the weight of meat and times, but it doesn’t tell you on what temp to smoke. I had to google and search on Amazon for answers. That was annoying.
Also, there’s a went on the lid. It doesn’t tell you in instructions if you should keep it open, closed or what. So I had to search for that too.
Cleaning is a hassle, the smoke residue sticks, so it’s hard to clean. But honestly, I don’t think it has to be squeaky clean after each use, so I guess we’ll see about that.

My chicken/smoking time specks: Size 5.5lbs. Smoked on 275, for an hour and half. I completely closed the vent, per someone’s answers here on Amazon, and that did the trick. The chicken wasn’t too smoky, it was JUST PERFECT.

Overall, go for it! Great price, great product. Just be prepared to find instructions before starting and write it down for future reference.
