I place the dough on the parchment paper and roll it out larger then 12", then I place a 12" pizza screen on top of the dough as a template and use a pizza cutter to roll around and cut off the excess dough which leaves me with a perfectly round 12" dough which is perfect for the size of the oven. Then I use a pizza docker to help control the rising of the dough as it cooks. Then I dress the pizza, slide my pizza peel under the parchment and load onto the hot stone and bake for two minutes lid closed. Set my oven timer for two minutes, when it goes off I slide the pizza from the parchment and back onto the stone and continue baking. At two minutes the parchment paper is pretty well charred and shot, don't push it beyond that!
IMPORTANT: Another point and this is very important!!! When making a full 12" dough, and after trimming the excess dough with the pizza cutter be sure and cut off the excess parchment paper on the front end of the pizza peel so that it is even with the end of the peel and the edge of the dough. You need to do this because it will let you place the pizza and parchment against the back side of the cooker without excess parchment crammed against the back cooker hinge. Also if you think your toppings are a little to high just use your hand to press them down a bit before you begin cooking. Be careful not to crown them as there is a tendency to do this with toppings. Remember there is a little less then 1-1/2" between the top element and the top of the stone. And consider every dough will rise some, even using a pizza docker to try and control it somewhat. So be sure and try to calculate the factors of the dough rising and the toppings as you consider the less then 1-1/2" space you will be dealing with.
UPDATE!!!
My second usage was perfection! My first pizza cooker was the Pizzacraft Pizzeria Pronto Outdoor Pizza Oven - PC6000 which I rate at one star. The Breville Crispy Crust Pizza Maker BREBPZ600XL ... I rate at 10 stars! I can also let you know that the Breville plastic developed a crack about 2" long in front behind the handle and after assessing it I conclude it in no way effects the operation. Given the extreme heat is what more then likely caused this to happen. I will not be returning it given this cosmetic issue. This cooker produces the perfect crust, crispy bottom and chewy in the center. And all in a few minutes. Given I almost messed up, be sure to move the dial from the preheat setting to the thin, med, thick setting after you load the cooker. It is easy to overlook this detail given you are more then likely shifting your attention to the 2 min timer on the oven for the parchment paper.

2. Use thin crust recipes for a crisp tasty pizza that doesn't burn on top- medium heat
3. Use parchment paper under pizza for 1 or 2 minutes. Remove the paper and cook for another 4-5min until done
4. Wonderful pizza toppings from left-overs- try roasted veggies!
I have considered outdoor stone pizza ovens (and I'm sure cook even better pizza), but the simplicity and ability to use this indoors makes it worth every penny.
Now I just need to make the perfect crust and prevent spillage onto the stone which burns and produces a lot of smoke No fault to the oven!
I've had pizza every day since I've got this oven....and there's no sign of stopping...
