I went through all different type of coffee makers, pour overs, and my latest have been the grind and brew coffee maker types. I have been very much mystified on how to make that mysterious delicious cup of coffee. I finally thought I am going to give a French press a try. I jumped on YouTube and began watching videos on how to make that great cup of home made coffee. However, after watching those videos, I thought what a humbug cleaning up the mess. I wanted some thing fast and easy and I wanted good results. And like many of you out there I was unwilling to spend $300.00 for one of those fancy coffee makers.
While watching the French press videos, I stumbled across the Clever Coffee Dripper (CCD). I became interested, it looked simple, made sense on how to properly "bloom" the coffee, and the proper way to make a cup coffee in about four minutes. The clean up looked really super easy. I ordered the CCD and received the order from Amazon promptly. Upon arrival, I inspected the CCD and it seemed to be made of heavy duty plastic, sturdy, and large enough to make one good size cup of coffee. I am not a technical person, either it works or it don't work, plain and simple as that, and in this case it works well. It seems to be sturdy and reliable for long term future use.
I set up the CCD and followed the You Tube videos. I used a Kona Muldavi coffee coarse grind (I live in Hawaii and the Kona coffee here is the king of coffees}. I poured my first cup of coffee and did not have high expectations, but boy was I wrong! Wow! My quest was over! The coffee was absolutely delicious, just as good as my local coffee shop! My wife also loved the coffee. Clean up was just as simple, throw out the coffee filter, wash out the CCD with the extra boiling water that was used to make the coffee, and finally into the dish rack to dry. I have since used my CCD every day and my other coffee making contraptions have been put away in my pantry and probably will remain in the back of the pantry until our next garage sale.

My process:
1 - heat water. Optimal temp is probably 185-205. If you want to skip the thermometer, bring it to a boil and let it sit 1-2 min before pouring so you don’t scorch your coffee.
2 - while water is heating up, measure and grind beans. I do a 15:1 ratio water to beans. I’ve found that the dripper maxes out around 420ml, which is 28 grams of beans (note, you need a larger mug or travel mug to fit this volume). I use a Hario hand grinder, and go for a medium coarse grind. It took a week or so initially of adjusting the coarseness of the grind to get it right, and my first few cups were not great as a result. So if you don’t get it right at first, don’t despair! Try adjusting your grind!
3 - place #4 filter in the dripper. Once water is boiling, rinse filter / heat the dripper. Honestly, I don’t think heating the dripper is as important, but rinsing the filter definitely gets rid of the paper taste and is a crucial step. Drain water into mug.
4 - add grounds to rinsed dripper, and start your stop watch. Add approx 50 ml water, being sure to wet ALL the grounds. This is the “bloom”
5 - at 30 sec or so, add another 50 ml or so, again, covering all the beans.
6 - you can repeat the last step again if you want, or not. I’ve had different results with different beans. If you repeat step 5 again, you’re going to add 15-30 seconds at the end.
7 - fill to remaining water volume (in my case, 420ml).
8 - at 3 min, give a gentle stir
9 - at 3 min 30 sec, place dripper on cup. If you repeated step 5, wait until 3:45 or so to drip.
I’ve varied my process a lot, and messed with each variable, and this is what works for me. The grind coarseness seems to affect things more than anything else. Too fine, and it will take longer to drip resulting in a bitter cup. Too coarse and it will drip too quickly resulting in a weak cup. All in all, my process takes about 10 min from the time I fill my kettle with water, and if I’m a little off with my timing or my measurements, the process is pretty forgiving and I still end up with a really good cup. It’s a bit of effort, but worth it.
