So far I have thinly sliced sweet potatoes and apples, small cubed a butternut squash, and small julienned a sweet potato. All of them worked excellently, except cubing which worked very well minus one glitch. Keep in mind that butternut squash is probably one of the most dense foods you could cut, even more than a potato. I have yet to try cubing on a less dense food. The small problem I had with cubing was that about half the time, the cubes would all be attached to each other with a very thin layer of food between them. This is because the slicing blade thickness was a tiny bit larger than the height of the cubing blades. It worked perfectly about half the time. The glitch might have been because I was pushing down on the knob too hard causing to the slice to be slightly thicker than desired, but I have yet to test that theory. Even with this issue, the cubing was sufficient and very fast. Much better than chopping the whole thing with a knife.

The waste food amount that doesn't get cut when you're done is about normal. I doubt that any other shredder, slicer, or food processor could do better.

It cleans very easily and there are no removable parts to fiddle with. It is a very smart design.

There is some practice and a learning curve required. Cutting the food to the right size to ensure a good fit in the guide helps a lot because it makes the food very secure and you can apply ample forward pressure to cut dense foods easily. Pushing down on the knob while pushing the guide forward takes a little practice. Securely grabbing the handle in the back helps a lot too.

All in all, it works as expected and has the most comprehensive feature set. It would be nice if the instructions would explain the best practices in greater detail, but either way it is easy to figure out with practice.

I was a little concerned about the overall quality and durability of this mandolin. Several reviews mentioned problems with knobs breaking. This gadget is designed such that to change any of the settings, you have to pull the knob out, then turn. I'm not saying that other folks didn't know this, but I can see breaking this sooner or later trying to muscle the turn without pulling out. Frankly, the little handbook should have that aspect in larger, bold print. If you don't read the manual, that aspect may not dawn on you frankly as not many kitchen tools work in that manner. The machine I received seems very well made, is sturdy, and the blades are very sharp.

I use this primarily while preparing community dinners - and first use cut the cubing of 15 lb of onions task from about an hour to 15 minutes (not including peeling prep). It is easy to clean. I would recommend getting armor gloves to wear while using as sooner or later if you're using this for larger/lengthy tasks, you will run into a blade (I think) - and the blades on this thing are incredibly sharp.

Very happy with this purchase. I'm not bad with knives, and I suspect professionals may not use a device like this - but if you need a good tool to julienne, cube, and slice - this is worth considering.

This product does a fair job, but don't try to dice produce that isn't solid; such as peppers. Onions and potatoes dice well, but you have to give the process a bit of thought. Trying to dice peppers will result in pepper puree, but they slice awesomely. Onions dice into fine uniform cubes and can be uniformly sliced from thick for cooking to super thin for tasty sandwiches.
Now for the downside. The slider is hard to manage because you have to press down on the white center and slide the grey holder with one hand while holding the handle at the top end of the ramp to keep the mandoline from sliding. You also need to plan to loose the last slice or two from the fruit or vegetable or to cut that part by hand. I suspect this has to be true of all mechanical slicer/dicers because there has to be a part of the produce that is held to move it through the machine; a trade off from the food processor, but the mandoline is much easier to clean.
That's where thinking the process through proved useful, don't follow the directions precisely. For dicing onions, clear the outer layers of the onion to only those you want to keep and cut off the top only, mount the bottom of the onion to the slider. That way you only loose what you probably would have cut off normally. For dicing potatoes, ignore the directions to start at the cubing point. Instead, start at the top with the whole potato, the first pass will remove the bottom end and then you can dice the rest of the potato without problems. I used thin skin potatoes and left on the skins.
For slicing peppers start by slicing the pepper through the center with a knife, leaving the top and bottom intact to fasten to the slider. Remove the seeds with a spoon. After you finish slicing you can dice the ends by hand to avoid waste.
I haven't tried a bunch of fruit, but apples seem to slice and dice like onions, but cut through the top and bottom to remove the core before processing. If you don't be prepared to pick it out in pieces after you finish. Not that big of a deal when slicing, but a real pain when dicing. The up side is more uniform pieces than produced from any food processor I've used.

One last consideration and what appears to be a common complaint. The blades need to be sharper to improve performance.
