Excellent success with my first use. Came with good instructions and link to a helpful video, also instructions for contacting the seller if I had any questions/problems (which I didn't). I especially like the dough scraper that came with it--I was using a smaller one and this large, flexible scraper works much better. A bit of preface, I am far from a bread expert nor am I much of an accomplished baker. I just enjoy baking and I like eating bread. I learned how to make bread from the highly-recommended book FLOUR, WATER, SALT, YEAST by Ken Forkish. In that book he recommends buying a "proofing basket" or banneton to use for your final rise. For about an entire year I made bread without it (because it seemed so unnecessary and silly to me). Only when the banneton was on sale for, like $5 off or something, did I decide to buy it. I shouldn't have waited so long.

There is very little to it. It's just a wooden coiled basket with an elastic linen cover. It's very tight and well-made. I didn't find any pieces of rogue wood or splinters. The elastic linen cover seems like perfectly good quality and fits great. It's a bit snug, but I'm sure that's by design.

I've sometimes struggled to get a good proof on my breads before. I think my problem often came down to using the wrong type of container to proof in. I'd generally use a stainless mixing bowl that was too wide for the bread. It would then spread out laterally instead of rising vertically. It's not a problem with this banneton; my very first attempt proofed my white bread BEAUTIFULLY and tall. I liberally flour-dusted in the inside of the basket and stuck the elastic linen cloth on like a shower cap. In about an hour my bread had doubled and was pushing the linen cover up. I didn't get large exaggerated lines on the loaf, but that's something I really don't care about. I just want my bread to turn out well and taste good. Overall, great success! I'm actually looking forward to making more bread now that I have all the proper tools at my disposal. Oh yeah, it came with a bonus plastic bench scraper! I was going to buy one anyway but now I don't have to!

Been making sourdough bread but first time using proofing basket

I have to let you know that while I've been making bread for two years this is my first proofing basket. It came with a scraper if you need. The proofing basket liner, near the center, arrived unraveled. Nothing a needle and thread couldn't fix. Only my pinky could pierce the hole anyway. I'm not very good at using this, twice I've failed. The dough stuck to the liner making it difficult to clean. Very difficult. This is what my ratings are based on. I'm not giving up just yet and I don't have another proofing basket to compare. The basket is sturdy and I have no complaints about smell, splinters, or nails but it was pricy. The online pictures show a seamless basket without joints. The joints do make the basket look cheap and I can see why some are upset. Seriously, I do not believe the joints will affect the final baked product. If I want to nit-pic, well the drilled hole for the tag could have been smaller and better positioned, but it is not that critical. Well, not yet, since I'm still learning to use the liner. So, how did I make my bread before? Formerly I folded dough on my Formica counter beginning at 30 min intervals. Kept the dough covered with a mixing bowl until ready to bake. With so much practice and failures I just know when the dough is ready by the look, feel, and bubbles. BTW, it takes longer for sourdough to rise if your kitchen is cold, such as in winter. My last fold, before baking, is placed on parchment paper to finish proof. Not before because the dough sticks to the paper and you willl not be able to fold again. The baked bread releases from the parchment nicely. Other than that I haven't tried the basket without the liner yet. One step at a time. I could share a picture of my beautiful bread with the parchment paper, but that would be deceiving because this is about the proofing basket. I have no pictures and you don't want to see the blobs I created trying to extricate the dough from the liner. I definitely need practice and seriously doubt there is anything wrong with the proofing basket. I see youtube videos of bakers working with the liners and baskets with no problems. I even watched the instructional video provided. Would I buy this again? Well, probably not. I thought I could make fancier looking bread, but I'm not convinced it is worth it. Good luck, maybe you will do better!
