Original: Compared to other 8 quart PCs we've owned I love the lid quality of this. It doesn't twist on, so the gasket should last longer, and it doesn't have the long handle like the one we just wore out by the leverage and hand-clamping while lifting. The top is substantial and reassuring though heavier.
I dont know what to think about the shape. It's narrower than others and taller. so on one hand we can cook to a higher water line and on the other our kitchen island is counter height so my 5'6" wife has trouble looking down to the bottom without bending closer to the edge when browning.
This pot almost fits inside our old 8 quart Fagor (but not quite) and is about an inch taller.
Here's another possible con or at least something to think about: it seems that the electric "instant pot" type PCs are the rage on recipe websites, but they do not heat up like a stove-top does and they cook at lower pressure. As a result, if you go by their times you'll overcook! Last night's lamb recipe was about 25 minutes too long, and they had shortened the time already from the electric cooker recipe by 15 minutes... our lamb was all but destroyed. Also this unit does 15 psi so there may be a difference from 12 psi stovetop recipies as well.
I like to stick to a 50-minute rule of thumb for tough cuts of meat, while some recipes suggested 90 minutes or more!
I love how heavy the pot is; I use it for other cooking besides pressure-cooking; I think it will last a long time.
I like how easy it is to install the lid; no trying to find "just the right spot" such that it can be sealed, etc; you just place the top on the rim, then twist the handle on the lid to lock it. the gasket inside the lid seems heavy and durable, and not prone to getting dry and cracked.
I like the pressure spigot; you just put it on all the way on the first use, and it just stays on; thus it doesn't get lost. I must admit, though, that nothing in the instructions tells you that you must firmly press down to get it all the way down; I didn't do that at first, and found it didn't work, until I figured it out. I find most user manuals these days don't give adequate directions for use of the product.
so, just remember to push the pressure release valve all the way down on its housing, until it's firmly on.
also, don't forget to twist the handle until it's sealed; I forgot one time and steam was coming out from the lid. I had to turn it off, cool it down, then take the handle off and put it on properly, seal it, then start again.
It's done a fine job with tough cuts of meat such as shanks and bear meat, which I usually have to bake for six hours to get it as tender!
So very simple to use and great for those not used to pressure cooking.
