I have made two awesome meals this weekend. The first meal was a rosemary, thyme and lemon chicken breast, and the second was ribeye steaks. Both meals were easy to prep, cook and assemble. And both had incredible results-- moist, tender, and flavorful.The first meal was incredible, some of the best chicken that I've ever made. In the bags went half a chicken breast (from a family pack total of 6), sautéed red onions and garlic, a slice of lemon, a couple of sprigs of rosemary and thyme, and some Chardonnay wine. I cooked the entire family pack of breasts off at the same time (each half in an individual bag). Cooked at around 141 for about 2 and 1/2 hours rotating every now and then. Finished with pan searing the breast, sautéing more onions and garlic, some sliced wild mushrooms, then deglazing with Chardonnay, lemon juice, bag juices, and some chicken stock. Reduced down the sauce than tempered into a butter rue to thicken up...delicious.The second was just some excellent ribeye steaks (2) with a little bit of red wine. Cooked at around 150 for 2 1/2 hours. Pan seared the steaks in butter, removed steaks to rest. To the pan added in some onions and garlic to Sautee to soften. Added in some ground pepper, dried thyme, ground cloves, and a dash of ground nutmeg. Deglazed with red wine and bag juices. Reduced, and served over the sliced stakes.Both turned out incredible. The chicken was well cooked and not dry and rubbery, and the steak was near well done, and not dry and tough. Both were incredibly moist and tender; but, the steak was a bit more well done than I was targeting for. You might want to adjust your cooking temperature target to account for the pan sear at the very end.Pros:1. Pretty much set it and forget it.2. Handled the 12 gallon container I bought for it, but needed to adjust the temperature.3. Both meals turned out fantabulous with a quick sear in a pan served with a feeble attempt at a wine reduction sauce (I definitely need to practice this skill of making a wine reduction sauce).4. Very easy to use, controls are very easy to understand and set. Note -- you can change the time and temperature mid-cycle just by selecting the M button for your desired setting and adjusting your setting. Hit the play button and it goes at your settings.5. Getting very moist chicken without brining.Cons1. I'm not sure if it's because of the size of the container I bought for it, or if it's a flaw in it's design, but I had to set the temperature about 2 degrees higher than what I wanted. By the last hour or so, in both cases, my water temperature was about 1 degree higher than what I wanted. This is why I only gave it 3 stars on temperature control, 4 stars on accuracy, and 4 stars over all.2. The alarm on the unit is barely audible -- minus 1 star for easy to use.3. I have the large instant-pot, and I can't imaging putting more than 2 bags of meat in it to maintain the circulation required. I'm not even sure how this would clip in with the inner pot in the Instant Pot unit --despite how they advertise this. I did not deduct any stars for this.All in all, these were my first time cooking with the Sous Vide method. I'm very happy with it. If you are new to this process, or even get a new unit, I'd recommend that you do a wet run of the unit. Just fill your vessel with hot tap water, set your temperature and average run time of what you would use, and let it do it's thing. While it's going through the cooking process, spot check with an instant read digital thermometer.I did this a couple of days in advance to see where my cold spots were and the optimal placement in the vessel. After doing this, I knew that I would have to rotate around my packets of food and knew that it was about 2 degrees off at the beginning and would eventually run hot towards the end by about 1 degree. You will know if you have to adjust your cooking time. In the end, I decided that upping my temperature a degree or two, would not cause my meat to get over cooked, and I also purposely set my cooking time on the low end.I'd also recommend doing some research on Sous Vide cooking. I relied on the Blue Jean Chief. The documentation sent with the unit is terrible and useless.I will say that I was shooting for a medium well on the steaks, and ended up closer to well done. Next time I might set my target for around 148-149 (cooking temp on the unity of 149-150). All I can say, it's a learning process. I'm not sure if it was the searing process that pushed my steaks over the edge, or my target temperature was too high (I did not check with a thermometer, my observation was based solely on appearance, there was very little red, and what red there was, was very pale) . I don't think the time spent in cooking affected the outcome much. The recommended time for Ribeye Steaks, according to the Blue Jean Chief, is 1-6 hours at 150 degrees. I will definitely be adjusting next time I make them with the Sous Vide.Some have said that you can't adjust your settings mid-cycle but you can. Just press on the M button until you get to your desired setting. Then select the +- key to adjust to where you want to go. Finally hit play and it resumes. I had no problem adjusting temperature and time mid cycle.I'm always looking for new, easier, and interesting ways to cook and this is my new found favorite toy. Looking to do thick center cut pork chops next weekend! I was really impressed with the Chicken breasts. Before, if I wanted such moist breast's, I'd have to brine them for hours. Sous Vide eliminates that step and makes it much more healthier for people with heart issues (Like my family). No more soaking them in salt for hours.I'd highly recommend this unit to my family and friends (and already have)!

The Good:
The temperature is very accurate, within a few 1/10's of a degree tested with a calibrated Thermoworks thermometer.  Tested from 133 to 165. 

The water flow in a 14qt pot is very gentle but thorough resulting in even temperature throughout the pot.

The user interface is easy and intuitive and didn't require reading the manual.  I love that you do not need an app, smartphone, wi-fi or bluetooth connection to use the device.  The biggest complaint I read with connected devices are connectivity issues. I was up and running in seconds my first use.

This unit is whisper quiet.  When I first turned it on I thought it was not working until I saw water movement and the temperature rising.

The temperature guage always shows current water temp, which I like, so one can know the actual temp as opposed to where it was set.  Timer continues even when adding water and temp drops.

The manual is very nice and well laid out, with the customer support phone number and e-mail easily found prominent throughout.

Speaking of customer support, probably the biggest positive is Instant's customer service and support.  Within 3 minutes of dialing their number I was speaking to a live person here in America.  He was very helpful and although he did not have an answer placed me on hold and within 2 minutes had the answer for me.  My experience with Anova was vastly different, no one answered the phone, no response to forced voice mail, and their "chat support" was automated spitting back canned impertinent responses.  Suffice it to say Anova customer service steered me away from their product, Instant's caused me to order their product as soon as I hung up the phone.

There were a number of negative reviews about the clamp which I understand, but; there is no need to tightly clamp the device, all you need to do is secure it to which I felt the clamp was more than sufficient.

The overall build quality looks very solid including cord and buttons on the user interface.

Heating test:
In a 14qt pot it went from hot tap water of 119 degrees to 133 in less than 8 minutes, from 133 to 165 in 21 minutes, and from cold tap water of 58 degrees to 133 in 45 minutes.  In a  28 qt cooler with the lid off it went from 120 to 133 in 27 minutes.  This is my first sous vide but for normal family use this seems more than adequate and heated faster than I expected.  All sous vide makers recommend preheating water. 

The "Not so good":
There is nothing really major to report here.  I will say that if you plan to do large parties, commercial use, and using containers larger than 20qt, I'd consider a 1200 watt unit, which may be overkill for typical family use.

Another small nit pick is that the clamp pulls the Accu Slim body so it rests on the side of the inner pot which can cause a slight rattling noise in a stainless steel pot.  This is the only noise emanating from the device and is not a big deal.  It would have been nice if Instant addressed this in its design as it is a simple fix.    I ended up placing a thin rubber washer around body at the Max line which resolved the issue and it is whisper quiet.

Overall I am very impressed with the Instant Accu Slim and would buy it again.

I'm new to this cooking method. I can't compare this to the product of other brands. I like the price. Not as pretty as the sexy, gorgeous and expensive Breville Joule, but my Instant Pot circulator doesn't require Bluetooth or a WiFi connection. Set the temperature and time, add water and bagged food and press "play"
A potential issue for finicky dishes like my mom's egg custard is the lack of fine tuning the temperature on the Fahrenheit mode. Happily, the Celsius mode offers 0.1 deg increments.
I favor its compactness compared to the humongous Anova (my neighbor has one). Its 800 watt element won't heat like 1000 W, but it does the job--sous vide isn't for people in a hurry--it's for people who like their food cooked just right. It would make a difference if you have to heat 12 quarts ( size of many sous vide cooking containers) every time you use it, but I seldom cook enough food to require such a large vessel and the difference might be only a couple minutes.
The clamp works for most uses and because the unit will stand on its bottom with sufficient stability, I have made soft boiled eggs in a small saucepan without engaging the clamp.
My IP sous vide toy is simple--it works.

I do wish it would keep its program, if the water level drops but not a deal killer.
The error codes requires referring to the manual--I'll want to keep that to avoid searching online.

The user manual has some quick and dirty guides with temperature and cook times to get us started. Forty five minutes at 145 degrees for soft boiled eggs was OK, but no better than America's Test Kitchen's 12 minutes at 167 deg F. Gotta love that giant recipe book, the internet.

The unit comes well packed in foam which I cut into smaller pieces and use as a "cover" to insulate the water bath and to reduce evaporative loss.
I've never had chicken breast or turkey so tender and juicy as cooked sous vide (I used the turkey recipe from the joule website). Cooking several beef steaks of varying thickness is a snap. Both a 3/4" steak and a 1" steak go in at the same time and come out at the same time, I pat them dry, sear the top side and serve!

I was hooked even with having to sear the cooked cuts on a BBQ grill or a frying pan (oil splatters all over the stove and smoke alarms beeping), but now, with my hardware store blowtorch, searing is clean & effortless. With such a low cost to start, why not?

Regarding those other cookers with wifi. Sure, you can start a WiFi cooker from work, hours before you get home (if the wifi connection isn't wonky). I can work around not having WiFi--I just cook for a half hour less than the full cook time, and finish the cook when I get home. It takes me 30 minutes to wind down after I get home anyways.

It's your basic sous vide cooker. You don't have to overpay for it, so watch for price drops down to as low as $55 between Turkey Day and Xmas.

I just got this and have used it only once but I am impressed so far. I used it for 3 bags with 2 chicken breasts in each bag. Used a clear plastic ½ insert deep for my reservoir. The clamp worked quite well although the cord exits the unit right above the thumb screw and tends to get in the way when tightening the clamp. Not a huge deal. I preheated the water in a pot to about 140F then poured it into the reservoir. Turned on the unit and set it for 145F. Didn’t take long to get up to 145F preset. I put the 3 bags into the water and used a digital instant read thermometer to keep tabs on the water temp. It maintained 144-145F throughout the entire 2 hour process. I checked the temp in every part of the reservoir and it was always at temp.
The settings were easy to navigate. No surprises. No wondering what the instructions meant. Very straight forward. Very simple to use.
If I was only doing one or 2 portions it might fit in the instant pot but it would be too small for more than that I think. The side of the container I used was slightly angled but it didn’t seem to cause any issue. My container holds 8L and I topped the water up after adding the bags so it was at the 8L mark which was just below the max line (well above the min line.) The water level did not drop noticeably at all.
So for my very first sous vide experience I was impressed with how easy this unit was to use and understand. Seems well made. Instructions are clear.
**UPDATE** Here we are in April 2023 and I’m still using this wand regularly and I’m still very happy with it. It still keeps the temperature exactly on in all parts of the bath. I often start with room temperature water and can take 30 min or so to bring it up to 130F so that’s pretty good.
I highly recommend this product. Certainly for the price point you can’t go wrong. And it is absolutely silent when running unlike some of the more expensive brands. I hear complaints a lot about them humming or whining loudly (too loudly to run all night). So if you’re on the fence, buy it.

We use our sous-vide inside a large soup pot. It cooks flank steak to a tenderness great for slicing into tacos. Great for any type of chicken (we do a special “green chicken” marinated in fresh cilantro), pork, and roast. We usually ise a heated pan or grill afterwards to add the quick sear marks. This device works well with the meat seasoned/marinated inside a sealed plastic bag. Highly recommend this sous-vide.

Used an 8 qt or a 6 qt Instant Pot as the container. Simply attach the wand to the side, lower protein of choice in a freezer safe Ziploc bag into preheated water and clip to the side. Turkey breast so tender and moist, also makes a less expensive roast as tender as beef tenderloin. Highly recommend. Freezer Ziploc bags are heat resistant to 158 °. Most foods are cooked between 129° and 145°...use the Joule or Anova app to look up various proteins for time and temp. You won't regret it.
