For starters, I've been making pizza from scratch using my own dough for almost 30 years, using a variety of types of ovens, methods and cooking surfaces. For the past 10 years, I used a wood fired pizza oven I built from scratch - sadly I moved from that house almost two years ago and had to leave behind my oven... which brings me to now - I've been wanting a replacement oven, but haven't had the time to build one, or the money to buy something nice and then I discovered the Napoli on Amazon. For the price, I figured I had NOTHING to lose. I read ALL of the reviews and after deciding that most of the 5 star reviews were from those who knew what they were doing, I went ahead and ordered one of my own. I also took one of the recommendations and purchased the propane kit.On the day the oven arrived, I set everything up and made two pizza's. Overall, given that this was my first use of this pizza oven appliance, I would say my results were passable. Before I give this a 5 star review however, I will need to use this at least 2 to 3 more times.Pros: Inexpensive, lightweight & portable, can run on either propane or wood.Cons: Not a lot of information on how to achieve best results - slightly under cooked dough on first use.First time around I'm not sure if I allowed it to pre-heat long enough - I did 30 minutes using gas - Once I got a reading of 500 F for the floor (which is what I used before in my larger oven) I popped the pizza in. I went a little long on the first placement and the edge was badly burned. I turned the heat down and then rotated the pizza to finish it and the dough was slightly underdone. The top looked perfect, other than the quarter end from not turning it away from the heat. My second pizza top was perfect, the dough again was still slightly under cooked.I wish there was a "user group" for this oven of that the vendor provided more tips and tricks (which I would be happy to write...) but bottom line, as I said before I will need to use this oven at least once more with the propane kit and once on wood before I'll feel comfortable with a full and complete endorsement.If you are an experience cook, and know breads and pizza dough and have used wood ovens, I would say you have nothing to lose to try this out. So far, I'm cautiously optimistic that I will achieve really good results - just need to figure it out...UPDATE - October 2019I agree with many of the comments about needing to learn how to use this product. If you've never used a pizza oven before, there are techniques that need to be learned. I've now used my oven for several months and must say that now that I know what to expect, it's easy to use and produces a great product.I just took it to my work (I own a small winery) and made lunch for staff - pictures enclosed - I love this product and highly recommend. Just keep in mind that once it's preheated, you get best results by turning it down (I really like the propane option) and make sure you rotate to keep the back from burning!

 This oven is fantastic! Hot, fast, superbly flavorful, crowd-pleasing pizza and more.

After living in Italy for a few years, we just couldn't find any local pizza that came close to that pizzeria flavor. I was well on my way to building a backyard brick oven (well, I had bought a book) when we found this. My wife immediately supported the lower cost, smaller footprint and immediate completion of my project. I thought it would be of temporary use until I finished the brick oven, but I'm done. This is too easy and tasty! After a year of use and refinement with all the accessories, here's what I've learned:

Wood only = great authentic flavor, but sooty and temperature sensitive, requiring attention to keep the wood-burning tray loaded and the temperature up. I've found success with pellets topped by a few chunks of your favorite smoking wood (I use pecan), with more fuel added after every pizza or two. A refillable butane mini kitchen blow torch made it SO much easier to fire it up. A digital thermometer is a must to determine when the stone is at least 500-ish. Impatiently adding pizzas when the stone was cooler led to some messes (the top gets burned while the dough remains uncooked). With some practice keeping the fire going and making sure the stone reheats after each pizza, this is a rewarding experience and provides the most authentic flavor we've found.

Propane burner = ridiculously easy, wicked hot, and crazy fast cooking time. This is our most used setup because it's so easy and fast and still tastes great. It's a clean burn (no soot on the ceiling of the oven) and the ability to regulate the temp with the turn of a knob is awesome. At full burn, it will register almost 1000 degrees, so the pizzas cook unbelievably fast (seriously, like a minute or two). The ease of use typically makes up for the slight loss of flavor.

Burner + wood tray = heat insurance with authentic flavor, but it's not exactly the best of both. While the wood tray returns the wonderful smoky flavor, it restricts the burner's flame, so this setup is not as hot as propane alone, but it's easy to start and there's no worry of a cooling stone if you forget to add more wood to the tray. The ash pile and burner share the same space under the tray, which fills up faster, reducing the number of pizzas we've been able to cook in this setup.

There are several great dough recipes online. We found a simple one that uses Tipo 00 flour from Italy, yeast, water and salt - authentically simple and tasty. Plan to make the dough the day prior and make extra. We usually make enough for 8-12 (it freezes fine).

Easy sauce = a can of whole peeled tomatoes, garlic and salt in the blender...done!

Toppings are the fun part, but don't lose your mind. Overloading the toppings can lead to a cold center. Raw sausage and eggs will cook while on the pizza - no need to pre-cook. Have fun finding new recipes and ideas. We enjoy making socca in the cake pan depicted in the pic. For an atypical pizza, try dijon mustard instead of sauce, with smoked salmon and havarti for a surprisingly tasty combo.

For faster prep/cooking we work as a team and use two pizza peels (one for the prep pizza, one for cooking) as well as a wide grilling spatula to help slide the pizza into the oven and to assist with the mid-cook turn. Sprinkle corn meal on the peel prior to adding the dough to assist in the slide. The oven is naturally hotter in the back, so a mid-cook rotation is key to an evenly cooked pizza.

Hope it helps. I absolutely recommend this oven. It's been wonderful and the response by the company has been top-notch with the few questions I've had. They totally stand behind their product, offering timely support and solutions. Huge fan!

Will this make 20 high quality pizzas all at once? Will I become a world famous pizza chef with my own Food Network show? Will you ever amount to anything great? The answer to all three is NO. BUT....You can make one bomb a$$ pizza at a time in one minute if you figure out your thermal utopia. Pellets by themselves...eh. Charcoal by itself...eh. Gas by itself...slightly better but eh? Gas with charcoal on the burner grate...strong contender losing closely to gas with hardwood chunks on grate. If you want to achieve 900F and keep 900F as you throw in pie after pie, you MUST use gas and wood. On cold autumn nights, your preheat might take 25 minutes instead of 15. don't sweat it, have another glass of wine and wait a few minutes. Your stone must be hot and I mean HOT. I don't toss a pie in unless the middle is at least 800-825. Anything less than 700 and you risk the dough sticking right away. You'll want to turn the pizza roughly every 20-25 seconds depending on heat balance so sticking will be your demise. Tip: use wooden peel for fresh pizza delivery onto the stone with cornmeal or some people like flour. Use a metal turner for turning (duh) and removal. Watching the flames roll over your pizza springing your crusts up into doughy waves of enjoyment and cheese bubble away into puddles of ecstasy will make you forget you're cooking a pizza and have to turn the damned thing before it burns! I had narrowed down the backyard pizza oven to this and the Ooni Koda (the newer multipurpose one was on Kickstarter and I didn't want to wait 5 months like a boojee chump!). For what it's worth, the new Ooni totally looks like a copycat of this Napoli in terms of design and the access to the back for the burner and grate. From the standpoint of having an outdoor entertainment center like a brick or refractory dome oven that can cook for days...this will never be that. But also, those suckers take 6-8 hours to heat up sometimes, 4 minimum. This heats up with one easy sipping glass of wine. Nothing like coming home at 7:00, cooking a pizza at 7:20, then being done eating at 7:23 and 48 seconds because the pizza was so damned good you scarfed it down like a hormonal teenager. It has paid for itself many times over just from the pure enjoyment of having better pizzas you'll never get out of your oven. I don't care if you weld baking steels to the inside of your oven, you will not achieve the leopard spotting and charring quality as you will with this. If you don't know what leopard spotting is, you can't be my friend. It's pizza lingo and if you don't care, then eat Domino's like a sheep. We hosted a pizza party where I cranked out 16 pies in about 35 minutes (gotta make the next pizza ya know?)
Overall I give it a 98.6 only because I feel like the grate should come with the burner, and don't even bother with the cover. It looks chintzy and who the hell covers up their pizza oven? Make more pizzas, you doufas!

UPDATE 9/1/2021: The original oven is still going strong being used at least twice monthly not including the numerous pizza parties we've hosted. I emailed Bertello out of the blue asking how long they're seeing the metal last because I have some rust on the back plate of the door and the burner add-on as well as some mild warpage of the metal handle bracket presumably from the heat cycles or outdoor storage (under cover though). I was met with fantastic customer service, not only did the owner get back to me the next day but a week later a brand new oven, burner, and tray came to my house. Talk about service! The paint has been upgraded as well and should be more durable. Other notes of change are a thicker stone which may affect calzone burning (thick calzones already struggle on the top due to being too close to flames) but that's small peanuts compared to what could go wrong. It's already a great oven and is now better because of the phenomenal customer service!!

Purchased two months ago and quickly and easily assembled. Fired up the grill with wood (only) and managed to get the temperature up to about 650-700 degrees (in the back) and 350-400 (in the front). Made a pizza and was very good. Cooled and cleaned and fired up the next night for a small party and could not get the heat high enough to cook. Found out the next day I had reassembled the wood holder incorrectly and no air was circulating.
1. Instruction book/on-line is NOT very good.

Decided to purchase LP system with wood box. Shipment came quickly and again, assembly was quick and easy. However, LP attachment did not fit snugly onto oven therefore heat was escaping. I sent email to company and the quickly responded and sent me a new LP attachment at no cost (and didn't ask for the old one back). New one was better but "fit and finish" is not great. I tapped and added a couple of screws to make the fit tight and not let air escape. Easy fix but something that could be fixed in manufacturing.

Cranked it up and quickly hit 900 degrees! However, again I have to say the instructions are not up to par. If you buy the LP attachment with the wood box, you will not need (nor can you install) the heat deflector that comes with the LP attachment.

Lastly, I originally purchased the cover but once you add the LP attachment, the cover no longer fits. I would also recommend they come up with a front cover to minimize heat escaping from the front of the unit.

All-in-all, great little product for its cost and I would recommend it.

Love it !!!

The oven is easy to setup and great to use.

The family love it and use it when ever the suns out
It produces the best pizza we have ever tasted.

Know I just need to find somewhere to get a U.K. gas attachment.

I would completely recommend this pizza oven to anyone.

Bought this because wanted wood fired pizza, I love how compact it is and it's great for anyone camping or RVing. I also like the fact you can purchase the gas accessory.

Absolutely amazing product better than the ooni . Very well put together and easy to use ! It isn’t small but not massive . Excellent pizzas and steaks. The great thing is the ability to use both wood and charcoal. The gas attachment you do have to buy separate. But well worth getting as and additional. The build quality to me looked better than the ooni side by side !
