Budget-Priced, But Not Recommended for Reduced-Salt Bread

Budget-Priced, But Not Recommended for Reduced-Salt Bread
This OSTER BREAD MAKER WITH EXPRESSBAKE (1.5 or 2 Pound Capacity) is budget-priced (about $112 on Amazon). It makes a nice vertical loaf of bread, IF you weigh your bread flour and follow the included recipes exactly. However, baking a loaf strictly according to the recipes is difficult, because the recipes do NOT include the flour weight. This is true even though the booklet advises you to weigh your bread flour! The recipes call for cups of flour, so you will need to do the weight math. Your bread flour packaging should tell you how many cups there are to a pound (for example, Gold Medal white and whole wheat bead flours have 3⅓ cups to a pound, which works out to 408 grams in the 3 cups required for Basic bread). If you need to adjust your ingredients (for example, if you need to reduce the salt for a no-salt-added diet), your first loaves will collapse badly in the middle while baking. I had to make a dozen experimental loaves to find the specific combination of 1 tsp. salt, flour, and water that would produce the 30% whole wheat flour loaf shown in my photo. When I followed the included recipe for basic raisin bread exactly (1½ tsp. salt), the loaf was beautiful–but it was inedible for someone who has been on a no-salt-added diet for some time. It tasted incredibly salty.Bread machine recipes found by Googling say that salt can usually be reduced by one-half, with no adverse results. This was true with my old Regal bread machine, and is true with my more expensive Panasonic SD-RD250 Bread Maker (about $260 on Amazon). With the Oster machine, reducing the salt requires a lot of experimentation.I like the Panasonic machine a lot. It makes a horizontal loaf, and it is flexible regarding the amounts of salt and other ingredients that I want to play around with. However, a number of reviewers have stated that the Panasonic machine quits after a few months. I haven’t been using my Panasonic machine (purchased to replace this Oster machine) for long enough to know whether it will offer more than a few months of service. There are differences in the way that the Oster and Panasonic machines make Basic bread. The included recipes for the two machines are quite similar, but the kneading and overall times are different. The Oster machine begins kneading as soon as you press “Start”, and takes a total of 3 hours for a Basic loaf. The Panasonic machine leaves the ingredients to “rest” for up to 2 hours before kneading begins, and takes a total of 4 hours for a Basic loaf. Both bake the loaves for about an hour. Both machines have settings for French bread, dough, etc. (check the product page descriptions for the exact types of things that the machine is intended to make). Both machines also have “express bake” settings that will bake a loaf faster than the normal 3 or 4 hours.
